This is the second time that I've made the fermented bean paste from NT. It was AMAZING the first time! But I wanted DH to like it, so cut the amount of raw onion in half. But I followed all the other directions exactly. Left it on the counter for 3 days. I left enough head space in the jar, but it expanded waaaaay more than last time, and kind of leaked whey/bean liqud out (I think). I still let it set out for the 3 days...and then I put it in the fridge early this morning and just tasted a spoonful and it's fizzy! Like it has been carbonated or something!
Is it ruined? Can it be fixed? Or is it "bad" and now only worth of compost?
