Great recipe for flank steak?

So we're getting to the bottom of our freezer stash of meat, and I found two giant flank steaks! I have one defrosting in the fridge right now and I realized I really have no idea how to cook it.

What's your favourite way to use a flank steak?

Marinate in olive oil, oj, lime, red onion, garlic, cilantro, cumin and salt for 8 hours. Grill, then thinly slice and serve on grilled corn tortillas with your favorite fixings.

I like to do it in a Korean marinade, this one is very similar to mine, except I use brown sugar.

Serve it with some stir fried sliced veggies (or over raw thinly sliced veggies in the summer) and rice.

Similar to Russsk's recipe:

Marinate in low sodium soy sauce, olive oil, brown sugar, lemon juice, onion, garlic, chilies and cilantro. You can also add a bit of grated ginger if you have it (I rarely do). Grill until medium, then slice against the grain. Can be served on its own, in a sandwich, for fajitas... many different presentations.

The key is that whatever you do with it, it has to be thinly sliced against the grain. It's tender that way, but served any other, it's like chewing leather.
