She says that for mild gluten intolerance, limit it to 2 servings a day. So maybe your 2 slices of bread per day is your tolerance limit? Have you tried NOT having the sourdough, and having a small bit of another type of bread?

What an interesting case. It definitely sounds like you probably have some type of wheat or gluten intolerance, but not a serious allergy. I think you should definitely look into getting some testing so you really know what you're up against, and can then plan a diet accordingly that will work for you. In the meantime (and after), as someone else mentioned, you should definitely look into GlutenEase. It will help your body break down the proteins in both dairy and gluten. It may increase your tolerance a bit. Even those who choose to g on a strict GFCF diet will often supplement with this just to ensure that they are breaking down the proteins as efficiently as possible. It's also good to have on hand for those days when you slip up or eat something on accident without realizing the ingredients.
