Artichoke Recipe? (Vegan)

I just bought a few artichokes and would like to steam them. Any suggestions? Generally I would steam them with lemon and serve it with melted butter and lemon juice. Thanks!

I usually steam and then eat with some vinaigrette.

You can stuff them with bread crumbs (I usually make my own in the food processor) sauteed in olive oil and garlic with a little crushed red pepper. I just stuff the filling in between the leaves and in the center (cut out the choke first) then steam them like you normally would.

You can add things like pine nuts or olives to the filling if you want.

I just steam them and pour on the good olive oil, a crack of sea salt and a crack of pepper...LOVE THEM...funny thing is I enjoy the leaves more then the actual heart

You can also toss them with olive oil, garlic, and salt, and then roast until done. I put a little water in the pan and cover for the first part of the cooking.
