Here is our story. Erin, born at home in June 09 weight 7.9lbs. Her first month was pretty normal and she gained quickly (though I do not remember the exacts, it was a really healthy gain!), bf every 3 hours, normal fussyness, content baby (from what I can remember. Month #2 brought hard stools and crying fits in the evening. We tried gripe water (it worked amazingly for our first daughter) but it did nothing. Her weight gain stopped almost completely from 2ish-4 months at 12lbs... so I guess she went from 7.9 to 12 in the first 1-2 months, then stopped, and only went up 1oz or less a month. She strained hard to poop, and only went every 2 or less weeks.
Around 3-4 months I suspected food allergy. So I quit all main dairy on my own, and made an appointment with a naturalpath. We made a plan... Anyways, going dairy free helped a TON, and I found that (though a food dairy) that beef (not organic) also caused issues. But there was still something, so by month 6, was off of gluten (on my own) to see if that helped, as I was tired of the screaming fits (even if they were getting better, she was still in some discomfort, and her poo had not even changed a bit.
She was given probiotics to help heal her gut, but by month 7 I noticed the naturalpath had given us one that contained lactose. 24 hours after I stopped the probiotics she had her first normal bf poop since she was 1 month old!!! Even products that 'may contain traces' of dairy harden her stool a decent amount.
So I am off of beef, all traces of dairy, and most gluten.
I can cheat and have white bread pizza, or a sub without any noticeable changes (besides I get bloated and tired) on the weekends (when I usually cheat). But I have trialed with a wheat spinach wrap and Erin got a small bad patch of eczema on her head.
I CAN have margarine, and butter on popcorn (air popped at home type) or heated on veggies etc. I have had white cake and icing without issues as well.
However one nibble of my other daughters cheese fish cracker sent Erin into a 4 hour painful screaming episode a few hours later!
Oh, and I can have goat yogurt.
I have not tried her on most of this yet (butter/margarine, goat anything etc)
She has had other hot allergens like egg, honey, corn etc on it's own with no issues, so I think I know what the triggers are, as she is pretty happy now, normal poop, and no screaming, and no rashes.
We also found she reacts to full soy products like soy milk and ice cream, but not things with soy ingredients (though me at least)
What is it that she is allergic too, is she sensitive, or intolerant, would it be the casein or just the lactose, why the beef.
Basically I am wondering why can I have the butter and such without a reaction, if things containing 'traces' bother her.
As well as why only full soy products cause screaming, but not soy lactin (sp?)
Also, why beef?
Lastly, is she a full celiac, or does she have wheat allergies or something else? (oh, I also had oatmeal on apple crisp this weekend with no noticeable changes too)

I eat anything I can, fish, nuts, smoothies, hemp and rice milk, white meat, lots of green veggies as well as others. I take supplaments (dairy and gluten free). So hopefully I getting everything I need there, though I have lost 15lbs since I started at 4 months, and that was me sitting around all winter here in Canada)
