So tonight when we went to Red Robin, there were corn dogs on the menu. DS said "that looks sooooo good". Then he said, "Mom, I bet you could make that." And I said... well, I could substitute millet for the cornmeal... then I'd have to look at a recipe and see the other substitutes... and he said, "You can figure it out!" I'm glad he thinks so. So if anyone wants to try that one (with no egg... that's going to be the hard part on that one I think), go for it!

chocolate waffles for breakfast
also making italian bread. no, I haven't given up on that idea yet.

Last night was salmon poached in white wine (so easy!) with carrots; artichokes with garlic mayo; green beans with garlic, onions, tomato and basil.

Lunch was shrimp cocktail.

Breakfast was green eggs and ham. The eggs were green from leftover creamed kale. The ham was green from those natural food dyes. Dd was NOT impressed

The day before, lunch was egg salad, kohlrabi, carrots.

Dinner was crockpot leg of lamb (cooked with onions and rosemary), asparagus and creamed kale.

lunch was tossed salad with teriyaki chicken on it (for dressing, I drizzled olive oil, red wine vinegar, and Coconut Aminos "soy sauce").

Dinner was Salisbury Steak (thank you, JR, for that awesome, fantastic, fabulous idea!!) with sweet potatoes for DS, white potatoes for the rest of us, and steamed cauliflower. DH missed out because I ate his portion (he's at work). Of course I did all that after swim class so we didn't eat until almost 8:30 but it was sooooo worth it.

We were at swim class, so dinner was deli turkey wrapped around guacamole on the way home (meat and veggie, right?). Also fruit (cantaloupe, honeydew, and watermelon for DD2 and a pear and an apple for DS). I also made strawberry shortcake for dessert (I had two).

I think tomorrow I'm going to try chocolate-walnut biscotti. I suppose I have to make actual meals too...

I've been fermenting lately, and just made my first batch of sprouts. Dinner tonight was lamb burgers on the grill, with homemade buns (that I'm finally mastering!) topped with fermented ketchup, fermented mustard, tomatoes and sprouts. We also grilled sweetbreads, so I got to try them for the first time. Totally tame, yummy intro to organ meats, even dh agreed. And that's HUGE for dh to agree and sweetbreads include the pancreas, woo hoo!

Lunch was leftover grilled chicken and guacamole made with onion, garlic, heirloom tomato, lemon juice and salt. And avocado of course. Wow, that was good guac!

My new favorite breakfast:
Fried eggs, kale simmered in coconut milk (think creamed kale minus the pureeing), and fermented raisin chutney (mercury folks might want to sub out the cilantro)

Yum yum yum!

Breakfast was millet pudding. I make it just like rice pudding but with millet.

Lunch was tacos: cubed squash, onion, black beans and roast beef with shredded red cabbage.

Who knows what dinner will be...

Amaranth has a sorto f nutty flavor. The difficulty is getting it to a fine enough grind (because they're SO small.

Trying to eat out of the freezer this week... What interesting (think flavorful and slow cooked) thing would you do with goat chops?
