Take the tube of a big squid and slice it once, lengthwise instead of into rings. At least I assume that''s how they do it. We just buy 'calamari steaks' from the fish counter. They're 4"x6"-ish and flat, about 3/8" thick, and so long as you don't overcook them, they're really tender. Also high in copper but low in zinc and iron...

Here's what our week's dinner menu looks like:

Day 1:
Roast free range organic whole chicken (I'll make bone broth from the leftovers)
Roasted carrots
Micro greens salad with avocado and baby heirloom tomatoes

Day 2:
Leftover chicken
Soba (buckwheat) noodles cooked in bone broth
Organic broccoli

Day 3:
Grilled filet mignon
Homemade organic sweet potato fries
Baby greens salad with avocado

Day 4:
Alaskan salmon
Rice or quinoa cooked in bone broth
Baby greens salad with avocado

Day 5:
Burgers on iceburg lettuce instead of a bun with tomato, pickles, ketchup, mustard
Sweet potato fries

Day 6:
Rice Penne w/grass fed beef, artichoke hearts, and fresh tomatoes
Organic broccoli

Did our shopping yesterday morning and Day 1 was a success, my little guy loved the roast chicken but wouldn't eat his carrots and my littler guy ate all the carrots but no chicken. Whatever....they ate! Littler guy is still nursing so carrots and some salad is a fine enough dinner.

I'm coming to your house!

Today I've made pretzels (still working on the recipe, changed from soft pretzels to regular ones and didn't come out like I'd hoped, though the kids loved them again), coconut milk yogurt, and I've got a batch of ketchup simmering now.

For dinner, it'll be Swedish meatballs (made with ground turkey, and turkey bone broth gravy), lima beans (frozen), tossed salad, and I'm going to try out the Chebe Foccacia mix I think (just got my order from allergygrocer.com today).

I'll be posting pics on my blog as I go. We just made the transition of removing our allergens from the house. I'm no longer going to do the short order cook thing and it's very exciting !!! And better for Jack.

Last night was meatballs with sauteed mushrooms and onions all simmered in coconut milk (next time, bone broth gravy). I added gelatin to the coconut milk, and served with plenty of salt and balsamic vinegar (plus noodles with ghee and basil, and roasted asparagus)

Last night was spring rolls. I found wrappers that were just tapioca and rice and wanted to try them out. I sauteed onions, cabbage, broccoli, and celery in a little olive oil with salt and pepper. Mixed in 2 Tbs. sesame oil. And that was my filling. Kids didn't like it. So I made plain broccoli spring rolls for DS. Then I mixed some chopped bananas with maple syrup, and made 4 of those (I had 2, and DS had 2, and wanted more). DD1 wanted nutella ones but I didn't want to contaminate the deep fryer oil (this was only the second batch of food in it). We also had steamed broccoli and some leftovers from the fridge.

Tonight is burgers and dogs on the grill (a turkey burger for DD2). Peas (frozen). Salad. And sauteed onions and mushrooms (for on top of either). We're having people over and I was selling at a tag sale all day, so I wanted it to be easy. Ice cream for dessert (normal for normal people, coconut ice cream for the rest of us).

Breakfast included leftover mashed sweet potatoes and collards cooked in bone broth and bacon grease with onions. I licked the plate

Dinner last night was lamb chops seasoned with rosemary, basil, thyme, salt, served with chopped sauteed onions and a reduction sauce - balsamic and bone broth. Plus artichokes and turkey sweet potato soup from the freezer.

we had a terrible week last week... very busy with work and school and meals were not planned ahead. we ended up eating waaay to late almost every night which resulted in fussy, hungry, overtired kids and a very stressed out mamma. my middle kid got sick at the end of the week (cold virus) and now i have it. anyway, i was determined not to have a repeat next week. sooooo... i became very inspired and made out the menu for the week and have spent much of today shopping and cooking some of the meals ahead of time so all i have to do is reheat when i get home from work during the week. i currenly have bone broth in the crock pot, stewed beef and green beans on the stove that will be served with brown rice on wednesday and a very yummy stewed clove chicken dish for tonight. i also plannned out the sals for the week so we alternate between a day with sals and a day off sals so we will hopefully also have a reaction free week! so here is our menu:

monday

grilled organic beef steaks
sweet potatoes
salad

tuesday

chicken and onions (chicken pieces marinated in lots of onions and lime juice overnight then arranged over sliced potatoes and baked) the juices are soooo yummy!
brussel sprouts

Wednesday
stewed organic beef with green beans
brown rice

Thursday

kids favorite: hobo dinners (hamburger seasoned with salt and pepper pressed into the bottom of baking dish, topped with carrots, potatoes and onions covered and baked

Friday

chicken sauteed with spinach and garlic and tossed with rice pasta


it feels seriously good to be organized after the week we had last week! now if i could just tackle the laundry that is scattered about my living room floor

I'm such a fly-by-the-seat-of-my-pants kind of cook. I want to be a planner, but whenever I've tried, I haven't been "in the mood" for what I planned 9 times out of 10. I've got to figure out a way around that...

Lunch today: egg salad sandwiches (I made "mayo" out of half an avocado, a little vinegar, salt, pepper, juice of a wedge of lemon, and a couple Tablespoons of olive oil, in the food processor) and Gluten Free Goddesses recipe for focaccia, but I need to change it because it was kind of gummy in the middle and I want it flatter, so I can use it better as "toast".

Dinner: baked salmon (walnut oil, sea salt for 15 minutes at 425F), sauteed kale with garlic, salt and pepper (YUM - my new favorite vegetable), leftover pulled pork from the freezer for DD1 who can't stand salmon, even though I always make her eat 1 bite when we have it, and leftover peas. And salad. And no dessert.

Tomorrow is beef day so I should take some grass fed beef out of the freezer tonight.

tonight is stew (pastured beef, can of tomatoes from my mother's garden, 1 turnip - don't tell the kids, white sweet potatoes, celery, onion, garlic, and a big beef bone) in the crockpot. Still have to figure out DD2's dinner since she can't have beef....

DS wants more pear spring rolls for an after-school snack.

breakfast was sweet potato pancakes made from leftover mashed white sweet potatoes mixed with eggs (and lemon juice, baking soda, oat flour) and fried in lots of ghee to make them crunchy. Topped with fried eggs, or wrapped around sausage. Plus maple syrup (for dh) to make it taste like it's from McD's.

Monday night was: grilled chicken marinated in evoo and lime with chili powder, potato salad (not American), and???

Tues am: hash (potatoes, onions and ground beef) with suarkraut

Tues pm: Taco salad (chips, ground beef, guacamole, tomatoes, kimchee, salsa)

tonight: brown rice pasta with chicken breasts, roasted red peppers, mushrooms, black beans and garlic. MMM. With salad.

Tomorrow night: taquitoes, guac, homemade salsa, salad

Friday night: grilled chicken, coleslaw, and something else

saturday: green chili, salsa ,ect

Sunday: roast turkey, mashed potatoes and sweet potatoes, salad, veggie

There! I've inspired myself, at least!

Last night was turkey soup with (okay but not great) biscuits.
Tonight is garlic-oregano chops and rice made with broth from the soup from last night and peas.
booring.

I'm going to go live with dannic for the week. though gigismom's sounds like a good place to be too

Seriously Jacq, I want to go to someone else's house too!

Last night was baked ham and a trio of potatoes (scalloped for me, baked for DH, DD1 and DD2, and sweet potato fries for DS). I never got around to making the steamed broccoli. That'll be tonight I guess, with whatever I'm having... I have no idea... it's salmon or turkey night (day 4 of rotation) and I'm not in the mood for either of those. I want fried chicken.

Oh, I also made tortilla chips last night (with just sorghum since I was out of buckwheat) and they were so good. I got an avocado hummus that was safe at TJs last night. No one else liked it so more for me! DS and DD2 had the chips dipped in cinnamon sugar.

Breakfast today is sausage (Jones) for DH and DD2. Millet porridge for DS. Nothing for me yet because the handful of pills I just took felt like a meal. And Sugar Corn Pops for DD1.

breakfast....leftover 13 bean chili (it's finally all gone )

lunch... salad with romaine, olives, hot peppers and grilled chicken and evoo

dinner... grilled hamburgers wrapped in lettuce with grilled onions and sliced avocado, kale sauteed with garlic then simmered a bit with bone broth


snacks... golden delicious apples and bananas

today was a yummy day!

not quite as organized this week as last but still at least have an idea of what we are eating each night. ds has been reaction free now for a string of days and seems to be handling the sals better, too!
