Homemade Grape Nuts type soaked recipe?

Grape Nuts are fairly simple - a bread type loaf made of wheat flour, malted barley, and yeast that's baked and then dried. I'm thinking it might be possible to make something like it at home and soak the grain. Before I venture off on my own is there a recipe out there already?

omg...I love grape nuts...to a very bizzare degree. I have no idea how to make them but would love some ideas!

I was just on another forum reading a conversation about barley. One person said "malted barley - roast it in the oven and it tastes like grape nuts cereal". Now if malting is basically sprouting... this seems doable. Not sure exactly how they prepared/served it after the roasting but it seems like something to experiment with! I love grape nuts too so I actually saved this comment in my recipe file.

rhiandmoi - Interesting recipe, but good golly does it have a lot of sugar. I'll have to file that one away and think on it when I have a bit more energy. I'm afraid the texture would be changed too much by leaving the sugar out.

I think that if you subbed in malted barley or something else sweet tasting it would be ok. I don't think that the sugar is doing so much for the texture as the flavor. Maybe adding a little bit of liquid for the lost brown sugar. It is more like muffin batter/dough than bread dough.

Sugar typically has an impact on texture/finished product composition, though, which is why it's a bit more complicated when you are trying to sub an artificial sweetener (or natural sweetener like xylitol or stevia) than just dropping it completely. I suspect the molasses content of the brown sugar would also have an impact on the moisture content of the finished product as well.

I figured the recipe based upon the reading was more like a cake batter and less like a bread dough. We tend to be quite sensitive to sweeteners so I definitely need an option sans sugar or other sweetener replacers.

ETA: I remember vaguely there being a recipe for some sort of cereal in EFLF...I'll have to see if I can find my copy. I know that with the soaked flour crackers I often think they taste a bit like Grape Nuts so maybe I can start there.
