Coconut Sugar?

Just saw it in the store the other day. It had a big ol' sign saying "A Low GI Food."

What you tell me about it? Healthy? Not healthy?

Tastes good or nasty?

Easy to bake with?

My Dad has diabetes and I'm a die-hard baker, continually looking for alternative sweeteners. I'd love any information, good or bad, that anyone has.

i love it. i think it tastes delicious, and it's so much less expensive than most alternative sweeteners. unfortunately, i can only find it in the hard block form, so it's not as easy to deal with as a liquid or powder. but i work around it and have put it in baked goods, iced cream, granola, and it's worked great.

i don't know how it works for diabetics. do be sure, as she says in the blog post above, that the only ingredient is coconut flower, b/c i gather it's commonly cut w/white sugar or HFCS.

It's really yummy! I get it at an Asian grocery. I have found the paste type once- it's the best, IMO. But usually I can find the little hard scoops? It looks like someone used a rounded tablespoon to mold it with. It's supposed to be like maple syrup in that it retains minerals.

The coconut sugar at my local HFS looks like brown sugar, only with larger crystals. It isn't cut with anything.

I'm SO excited to try it!

I want to make some granola today, so maybe I'll try it for that.
