April low carb support thread!

Sorry guys, I couldn't think of a clever april title!
That is funny! It's April 9th and I could have kept posting on the March thread forever.

Those pecans sound awesome btw!

Not as low carb as I wanted today, around 75 g carbs. Could have been worse, and tomorrow is another day.
I didn't notice either!

I freakin rocked the diet today. I'm so excited and pleased with myself

I logged everyhting and I was at 69 carbs.

That is like the lowest I've eaten in a long while. I'm gonna do this through next weekend. I noticed that I am a balsamic vinegar and carrot eating fool. I could eat 5 pounds of baby carrots ina day.

Problem is i need a lot of food. I require a lot of calories and i don't feel very good eating too much fat. I also don't feel good eating meat, i stick to eggs, turkey. I discovered I can still eat lentils and carrots and stuff, but i just need to watch the condiments. And peas. I loooooooooooove peas. Stop it Lisa, you week week woman.

Well it's Emerald cup next week so I'm supporting some friends and eat VLC through all next weekend and i'm gonna keep up with hard workouts. Normally i'll have a couple higher carb days during week but I'm tryin to support so it'll keep me in check.

Way to go Lisa!

So my numbers are wonky today:

Calories: 2497
Carbs: 48g
Fat: 234g
Protein: 83g

Woah, a LOT of calories, and a ton of fat today. Not quite as much protein as I'd like, and I was trying to stay under 50g of carbs and barely made it. Weird eating day.

Tomorrow I'm going to IF until dinner. We're having people over and going to have steak, spicy shrimp kebabs, and BLT salad. For dessert I'm making dark chocolate pots de creme with raspberry coulis! And tomorrows projected numbers are WAY lower than todays.

I have to keep reminding myself to trust my body. I obviously needed more fat today.

checking in here, worked out yesterday but foodwise meh. I cannot figure out how to do this maintanence thing I seem on one end or the other but I am maintaining I guess. my big problem is that meal planning has been horrid. I still got this sinus thing- stupid seasonal allergies- I was outside all day yesterday hs co-op and goodness it is amazing that my head can be filled w/ so much snot. ugh.

ryleighsmama- sorry to hear about the scale troubles- stay off until the period is over! I always jump up to after a super hard workout as well.

lisa- awesom that your arms have grown an inch that is impressive!!! keep up the good working on lc'ing it- you can do it!!!

lil_em-sounds like things are going well for you- dinner sounds yummy!!!

Aw, feel better crunchy_mama! I'm definitely excited about dinner, mmmmm!

So I've lost 5 lbs since going hardcore this week! It's the 5 pounds I've been sort of floating around in for the last couple of months. Now I need to break through that 5 lbs into uncharted waters!

Yeah, I didn't notice it was April either.

I'm a little out of it. The prednisone is making me hyper and I'm not sleeping well. Haven't been. Between the asthma and the prednisone...ugh.

Eating is going well. Right now the appetite is controlled pretty well. I feel like I'm retaining more fluid though.

Going to make jalapeno honey flank steak later today. If it turns out well, I'll post a recipe.

OMG I'm drooling in anticipation of that recipe!

Just FYI, I didn't ge to cook what I planned. We went to Home Depot and then Panera instead.

Tomorrow though.

I did make reduced sugar peanut butter cookies and pumpkin spice muffins in the hopes it will satisfy DDs cries of "I'm huuuuuungry" that are shrieked on the hour every hour. Hey chickie, I thought _I_ was the one on prednisone?

The peanut butter cookies were awesome and easy.

1 cup peanut butter (I nuked it a bit to make it runny)
1/2 cup sugar or sweetener
1/2 cup almond flour OR ground flax meal
1 egg
Some vanilla
1 tsp baking soda

Optional add ins like chocolate chips. I had some white chocolate laying around that I tossed in.

Mix. Form into small balls (about the size of a big marble). Roll in sugar. Bake 10 min at 350F.

Not a super low carb food, but good for growing toddlers I thought. I'm having a hard time keeping DD fed these days. I almost broke down and bought some crackers at the store but I couldn't find any with a food label I approved of.

These were yummy. I had to slap DH's hands to keep him away.

Oh thanks Violet! I make something very similar for DD with sunbutter. Actually i just put sunflower seeds, honey and dates(and something green, spinach or kale) in the vitamix and turn it on. Then scrape out and press in a little pan, cut in little cubes and put in fridge.

OMG. The flank steak was delish! Yummmmmmmmmy!

It's like a fajita steak salad with a jalapeno onion chutney for dressing.

I'll get the recipe together as soon as I can.

still following your progress girlies and trying desperately to get my act together and get back into it. feeling just fatigued and awful lately and i know just what i need to do but failing to make it happen. so sick right now with some virus that is making every joint in my body ache and i am nauseous. up all night with my littlest who had it too. hopefully good will come of this in that i kick my sugar habit while food sounds so wretched. doing good avoiding grains, but sugar is my nemesis. thank you for continuing to post and reinspire me while i find my way back.

When you're not sleeping, it's hard not to eat sugar. I think this is why it took me almost 2 years after giving birth to get back on track. DD never slept.

The one thing I wish I had done for myself during that time was work on trying new recipes and building my repertoire of yummy LC food so that when the time was right, I was already kind of in a groove, you know?

Recipe please that sounds delicious!!!!

Hugs wnt2bgrn!!!! Being sick stinks and not sleeping, oh my goodness I still don't know how I survived after #1- I am spoiled these days! Do your best and forget the rest- it is trite but really- I have made that my motto! Try to do little things here and there that you can do to set yourself up for success. As Violet said try new recipes perhaps to replace sugar favorites. Go to bed earlier , geeet in some activity when you are up to it and when all else fails - tomorrow is another day!!!

I have resorted to drugs here folks! Taking allergra D today- lets see if it works!

lil_em- HUGE congrats on the weight loss! That is awesome! Hopefully you will break into that uncharted territory soon, huh!!!

eats yesterday:
eggs
dark choco- x-sm clemintine
asian meatballs w/ carrot and cabbage
carrots and pb
chick w/ homemade pesto and sauteed shitakes and leeks

moderate carbs and a well enjoyed food day-

The recipe is up here. It was soooooooo good. I couldn't believe it. A real keeper.

I have a pic, but haven't downloaded it yet from the camera. Need to do that soon.

Crunchy-mama--your food diary is helpful to me as that's probably what I will need to eat like when I get to maintenance. I'm so used to no carbs, I have no idea how I will transition to anything else sometimes!

alright Violet, it's TIME i cooked a flank steak. Can anyone believe I have NEVER cooked a flank steak? seriously

Dance, play date for kids (coffee for moms ) and gym later today. And I've got to get outside and finish my yard work. I have to dig up a small tree and i'm sad about it. there are no if's and's or but's about it, it needs to come out...it's one of those bad planning by landscapers in a new development they planted a tree under my porch that will start ripping out my entire yard. I have a nice bush to replace it.

So i'm doing heavy chest, heavy arms, and fast legs, my legs are gettin too big.

Crunchy you are good at logging your food. I am bad. Maybe I should start listing it here so that i can read it back to myself.

The plan for dinner is yummy. My kids favorite alfredo sauce, and it's the time i give them pasta. It's such yummy fresh fettucine, and they eat so much chicken and broccoli with it it's amazing. I make it with chicken thighs and broccoli and the pasta is like in the background to that. I will use the same chicken for me and eat veggies on the side. DH loves it too.

Tomorrow i'm making stuffed vegetables, zukes, peppers and giant mushrooms. I make a stuffing with ground turkey.

I plan to make pizza one day, and roasted veggie soup (carrot, parsnip, butternut) and mushroom soup. I'll make paninis for the kdis/DH and just eat soup panini fillings on the side

I never made a flank steak before either. And actually I couldn't find one. I used London Broil.

I too have never cooked a flank steak, or a london broil!

I'm new to the world of meat. Dh is the meat expert around here.

Today I'm IF'ing until after yoga class. Then a nice supper planned. Dh made a bacon explosion roll http://www.bbqaddicts.com/blog/recipes/bacon-explosion/

and I will throw together a salad to go with it! Not our typical supper, but Dh really wanted one so... (who can say no to bacon, AND Dh making supper?!? )

oh, thanks for the recipe Violet- I love flank steak!!!!

lisamarie - sounds like a tough day for you- digging is never fun! I hope to get to working outside soon myself!

lil_em always wanted to make the bacon explosion- how do you guys like it any tips?

Oh, and glad to read my food journaling might be helpful in some way- mostly it is just me talking to myself. Trying to feel out this maintanence thing which is odd after being prego and then working on losing the weight I am trying to get my groove back- which I guess is working but I still am lacking in confidence for some odd reason.

food today:
eggs
dark choco
meatballs-w leftover pesto and a bit of mushrooms and leeks-nat pb w/ carrots and berry tea w/ some gasp sugar- haven't had a sweetened drink in forever!! I did cut the sugar in half though for the pitcher
thai burgers w/ roasted ginger carrot and parsnip and asian coleslaw

feeling miles better today must be the supplement cocktail- and am currently slamming down some nettle tea which is supposed to help as well . As you guys can see I am upping carbs. Trying to find my sweet spot- how high can I go and maintain? how high can I go w/out triggering cravings and crashes. Where do I feel the best? Today I feel totally rockin' mood and energy are 1000% - we will see how this week goes.

I am curious to know how the bacon explosion was????

I went to the doc today. Lost another pound. Two more weeks on prednisone so my adrenals don't shut down. And I am lucky in that we found the thing in my lung early, but it's so early there's not much to do but wait. It's not even big enough for a biopsy. However, having done the reading I've done, it's good to catch this stuff early rather than late. Time to work on my zen.
