vegan baking book

if you could buy only one vegan cookbook that is focused on baking, which one would it be?

all of the books from postpunk kitchen are candidates, but i'd love to hear your suggestions. (Vegan Brunch is tempting—because i'm guessing there is muffin mania—but i think i need cookies and cakes, too.)

For myself my favorite is Sweet and Natural by Meredith McCarthy.

However, the recipes in there are too "healthy" for my non-vegan DH, so if I'm baking for him I like The Joy of Vegan Baking by Colleen Patrick-Goudreau.

Agree. The Joy of Vegan Baking is your most well-rounded choice. There's only a dozen or so muffin recipes in Vegan Brunch (and a few other things like coffee cake, scones, biscuits, and bagels). I also love Vegan Cupcakes Take Over the World, but obviously that's more specific.

somegirl, the distinction you made sounds like my house, where my omnivorous dh freaks out about the idea of a cookie without dairy butter.

Yes, Joy of Vegan Baking is very complete.

Joy of Vegan baking wins hands down in my house! (& I have about 40 vegan cook books). It is so complete, covers ALL baking not just muffins & cakes & omnis always ask for the recipe of whatever I make from it (try the lemon slice!) - come to think about it I rarely use recipes from any other book these days (maybe Vegan Cup Cakes Take Over The World just for cupcake inspiration)

Oh, now I have to go out and get the Joy of Vegan Baking! I *love* making vegan baked goods!

I do also want to put in a good word for Vegan Cupcakes Take over the World. Obviously if you want something other than cupcakes, probably not the only baking book you'd want, but definitely an excellent resource for delicious (and relatively easy) vegan cupcakes.

I bring them into my students once a year and they *flip out* over them!
