Eating butter on a grain free diet

So I love butter and I have access to fairly affordable local grass-fed butter. The problem is my favorite way to eat it is spread very thickly on a slice of bread. However I'm planning on giving up grains/high carb foods in hopes of losing some weight and I'm wondering if anyone has some ideas for how I can still consume butter without also consuming grains and/or lots of carbs.

Use it for frying/sauteeing - eggs, veggies (blended with another oil that won't burn)
Compound butters make beautiful "sauces" for meats and/or veggies also... I just saw Alton Brown make one combining avocado and butter, looked fabulous, but the one I usually make is with mustard and herbs.
I also love browned butter over poached eggs - rosemary browned butter, especially. It'd probably be delicious over (blander) veggies, too, but I've never tried.
Hollandaise is also lovely over eggs or veggies or meat or your shoe.

And sometimes, if I'm feeling deprived, I just eat a pat of ice cold butter straight off the knife.

Nothing like eating a slice of cold butter ...so good. Generally garners some weird looks though.

I figured out recently that I really like it spread on a slice of cheese also.

Butter blended with some nutbutter and maybe a bit of stevia and vanilla = super yummy. If you eat fruit--its a great apple dip.

I put pats of butter on top of all of my soups.

Nut butter pancakes are yummy with lots of butter on top:

1 scoop nutbutter plus one egg--add stevia, salt and other flavoring to taste. If its too thick, thin with water. Cook like pancakes and eat. iF you thin it a lot, then you have crepes.

Lemon curd is a super yummy, nutrient dense snack. i sweeten mine with stevia so there is no sugar but lots of fat from the butter and eggs.

Steamed veggies with lots of butter on top are of course a must as well.

I use it to saute foods, and eat butter on most of my cooked veggies.

Melted on top of cooked veggies (I particularly love it on brussel sprouts, green beans, cooked carrots - although I prefer raw carrots, and spinach).

Just cold, by itself. A little slice of butter is better than a slice of cheese, imo...speaking purely from a taste perspective, at least.

Thanks. Yes I definitely eat butter melted on my veggies. I also like to melt a slice on top of steak when I eat that. I just miss the cold creaminess of butter spread on bread. I think I'll just have to start eating cold slices of butter by itself.
