recipes/inspiration for half a freezer full of frozen fruit (especially peaches and 'cots)...

so far we do:

jello (with real gelatin/real fruit)

magic bullet 'ice cream' (blended frozen fruit with a bit of juice and stevia/honey)

...i saw a recipe for frozen peach margaritas that i want to try (adult only! LOL)

fruit cobbler--i modified a recipe but it was pretty hum-ho. i need a good cobbler recipe if anyone has a gf/cf/sf one

any more easy, quick, kid appealing ideas?

I've made a bunch of my frozen fruit into jam/jelly over the last year. Also smoothies, (mix with yogurt & maybe a bit of maple syrup or honey for a bit more sweetness) and of course pies!!

I make a CF/SF dessert smoothie I named "Peach Pie"--Frozen peaches, coconut milk, honey, and pie spices (like cinnimon, nutmeg ect).

Make pies, they usually work well with frozen fruit.

sounds like a yummy combo, i bet it would be really good baked with some eggs to firm it up too...

hm...i'm not a big pie fan myself (they're soooo labour intensive, and i never eat the crust anyways!) but the other day ds mentioned that he'd never had pie before.

Fruit Fool is my favorite way to use up frozen fruit..."sweat" the fruit in a pan with a bit of sugar(or sweetener of your choice), puree and let cool.Meanwhile whip some heavy whipping cream until quite stiff, gently fold the chilled fruit puree into the cream...delicious

I use frozen apricots in pie all the time - they do beautifully. I usually mix them with blackberries for the color/tartness.

For the filling, I just toss the still frozen fruit with instant tapioca - enough to give it a good coating (maybe 2 Tbs per pie). The tapioca soaks up the excess liquid that's given off from the frozen fruit and keeps the pie from being too runny. Of course, you can do the same with any cobbler/crisp/buckle.

Peaches don't defrost well, neither to strawberries. You can take advantage of that though by adding them to plain (coco?) yogurt with a little honey - by lunch you have fruit on the bottom yogurt. Otherwise I just use them for cooked applications (compote, jam, etc.) or pureed (smoothies).

hm, ds cant have dairy, but i bet that i could make up something with soaked/creamed cashews that would work for this. cashews really make the most decadent whipped cream i've ever had in my life...

that sounds like a good tip, do you have a recipe that you use for cobbler, etc?
