I am expecting baby #2 in July and trying to think of meals (or parts of meals) to have in the freezer. People from church usually bring meals after someone has a baby but I really don't want to eat all the processed items that seem to come AND DD has food allergies. Can you help me think of things to freeze that aren't heavy winter dishes? DD is allergic to dairy, corn and soy but I am pretty good with substitutions. Thanks! REALLY easy/low prep meals would be great too!
What I have in mind so far:
*Pumpkin chicken enchiladas (enchilada sauce made by pureeing pumpkin, chicken stock, jalapeno and garlic, wrap chicken in tortillas, we top with goat cheese, serve with black beans and salad)
*Pizza dough and sauce, top with whatever
*"Bundle Burgers" (ground meat with mustard, onion and sourkraut wrapped in bun dough and baked)-trying to think of good variations on this
*Slow cooked "bbq" pork (I am thinking of cutting/limiting pork so maybe chicken, I will have portioned bun dough in the freezer I can thaw and bake as needed, serve with slaw)
*Turkey and spinach meatballs with brown rice, just add a salad or veg
