Meals to freeze?

I am expecting baby #2 in July and trying to think of meals (or parts of meals) to have in the freezer. People from church usually bring meals after someone has a baby but I really don't want to eat all the processed items that seem to come AND DD has food allergies. Can you help me think of things to freeze that aren't heavy winter dishes? DD is allergic to dairy, corn and soy but I am pretty good with substitutions. Thanks! REALLY easy/low prep meals would be great too!
What I have in mind so far:
*Pumpkin chicken enchiladas (enchilada sauce made by pureeing pumpkin, chicken stock, jalapeno and garlic, wrap chicken in tortillas, we top with goat cheese, serve with black beans and salad)
*Pizza dough and sauce, top with whatever
*"Bundle Burgers" (ground meat with mustard, onion and sourkraut wrapped in bun dough and baked)-trying to think of good variations on this
*Slow cooked "bbq" pork (I am thinking of cutting/limiting pork so maybe chicken, I will have portioned bun dough in the freezer I can thaw and bake as needed, serve with slaw)
*Turkey and spinach meatballs with brown rice, just add a salad or veg

Chicken curry soup
Tikki Masala beef sauce (served over rice)
Shepherd's pie filling

These are things from my recipe box that I'd be freezing. If any of them appeal to you, I'll share the recipe!

OP - Brown Rice & Tuna casserole.

I often freeze up bags of cooked chicken strips/cubes and cooked ground beef so that I can quickly throw in some veggies and a sauce and cook it up. Pre-cooked chicken defrosted also works for adding to salads.

You may want to look in the Meal Planning forum -- there's a thread called "Feeding the Freezer" -- there are a ton of recipes in there. You'll likely need to adapt some of the recipes, but it may give you some additional ideas.

For ideas for your "bundle burgers", try googling these terms: empanada, piroshki, samosa, calzone. They're all the same concept from different cultures.

For my pregnancy, I froze (raw) meatloaves. I just prepped them, packed them into foil loaf pans and froze. They take longer to cook since I just put them in the oven still frozen (about 100 minutes), but I could just pop a potato in the oven next to it and have meatloaf and baked potato - super simple.

I also made pumpkin moussaka, which is a lovely casserole. And I froze several loaves of zucchini bread. Everything else i made has already been suggested.

Soup, soup, soup, soup, soup!

I haven't met a Nourishing Traditions soup I haven't liked yet. You probably won't have a lot of time right after baby to deal with broth and chopping veggies, but the nutritious soups will be great for helping you heal after the birth, and served with a nice dollup of yogurt, they'd be good in any season.

Can I get that recipe? I LOVE pumpkin! Moussaka usually has eggplant too, right? DH is sensitive to eggplant, do you think zucchini would sort of work as a sub?

Thank you so much! That looks great. Do you freeze it without the bechamel and add that after?
