Need ideas for friend in hospital

A friend through our church is in hospital with a flare-up of IBD. She in on a restricted diet and the hospital food isn't meeting her needs in the slightest, so a group of us are arranging to bring her some meals and snacks.

I would like to bring her something that doesn't need heating or refrigeration as I doubt she has access to either.

Her restrictions are such that the food needs to be made from fresh ingredients, and it needs to be gluten-free, dairy-free and sugar-free. Even fresh fruit needs to be severely limited as it inflames her bowels.

So.... help! I am very willing to help her, but need some ideas. I'd prefer not to have to buy a lot of specialty ingredients. All I can come up with is sending over cut veggies. Any and all ideas would be helpful.

ETA: Oh, I just re-read the guidelines I was given, and she can't have pork either. But other meats seem to be ok.

I was in the hospital with my son for a month and wonderful people like you made it bearable by bringing me meals and snacks. He was EBF so all of the meals and snacks went on to him 12 hours later as my husband likes to say.

Anyway, double check about her hospital's facilities. They might have a "pantry", or "kitchen" for patient use. Unfortunately the only meal I can suggest is chicken, rice (cooked in chicken broth) and veggies.
I would even say that the staff is pretty sure to have a microwave (if she cares to use one) just because the nurses would bring in meals during their shifts.

Sorry, I am trying to be helpful.

Peanut butter and rice crackers. Gluten free pasta with a red (tomato with other blended veggies) sauce and steamed veggies and beef or chicken could be eaten cold.
Really any kind of mixed raw nuts.
Salad with a vinaigrette.

I am trying to remember what I had for snacks.... Unfortunately most of my snacks wouldn't fit the restrictions.

Good luck and I hope you get more ideas. Being in the hospital as a support person is hard. I can't imagine being in the hospital as a patient is any easier.
