Dried Beans in the pressure cooker?

I thought I read you can cook Dried Beans in the pressure cooker without soaking them. But unfortunately, I can't find that info.

Has anyone tried this? I have dried kidney beans and black beans. Hmmm I think there are others.

Split peas I make in the crockpot for split pea soup.

Yes, you can. Lorna Sass has a chart in The Complete Vegetarian Kitchen which lists soaked and unsoaked cooking times (both pressure cooker and stove-top) for a variety of beans. According to her, you cook 1 cup of soaked beans in 3 cups of water, and 1 cup of unsoaked in 4 cups. She says that both kidneys and black beans get cooked in a pressure cooker for 20-25 minutes if they're unsoaked.

Great cookbook, by the way, and highly recommended, even if you're an omnivore!

Yes, do it all the time, and I use the same list the PP mentioned. I have that cookbook.

So do I. Except its still boxed up and in my MIL basement with all my other cookbooks. Sigh....

Wish I'd known this sooner, but I need to get a new gasket anyways. Now I know though!!
