Potatoes!

What's your favorite way to cook potatoes? Potatoes are one of the few vegetables my younger ds will eat. Am tired of mashed and baked tots!

i mix a small bowl full of olive oil, salt, black pepper, italian seasoning, and sometimes other spices..

cut the taties into wedges, i like an assorted thickness b/c the thin ones get crispy but the fatties have more flavor..

drag the taties through the oil mixture, or mix in there to coat more thoroughly.
bake at 425 for about 30-40 minutes depending on the doneness you like & the thickness of the wedges.. you can flip around 10 minutes, you can also use foil to line a pan for them..

you can also use sweet potatoes mixed in there too (but watch them if you do- they get done faster but never crispy)

i am a veteran of the TED and taties were one of my "only" foods for a while.
the yukon golds are the best for this but others are yummy too.

I love the pioneer woman's crash hot potatoes (don't know if I'm allowed to link but if you google you'll find them!)

I love potatoes. They're absolutely one of my favorite foods and luckily my boys love them too.

roasted - I slice and then toss with olive oil, salt, pepper and cajun seasoning
baked
french fries - just slice and bake with a little salt (in our house, fries can't be eaten without fry sauce)
twice baked - I add butter, salt, pepper, sour cream, cheese and either bacon, sausage or bacon bits
scalloped - my "recipe" is incredibly unhealthy, but we only make it once or twice a year, so I don't mind too much. And they're so good it's worth it. I don't do exact amounts, so let me know if you want my sort of recipe.
potato salad - again, I usually add bacon or sausage

And then of course, there's always potato soup.

LOVE potatoes! My heaven is clouds of mashed potatoes.

Oven taters, as PP suggested.
Boiled fingerlings tossed with butter and dill
Scalloped with gruyere.
Twice baked, mash with broccoli, ham/bacon and top with cheese
In any kind of veggie soup

And our all time favorite, and soooooo fattening and yummy! Is mashed yukons with tons and tons of garlic and heavy whipping cream. You will never have better mashed potatoes. Leave the skins on!

I love home fries with onion, tomatoes, bell pepper, garlic and my secret ingredient: capers. Sour cream on the side.

When I was a young boy I liked to eat potatoes raw.

Wow! Thanks for the replies! Lots of great suggestions for our family to try.

D McG -- I googled the Pioneer Woman's crash hot tots -- I love the way she has a photo of each step of the cooking process...they look incredibly yummy! Will make this week.

Jaesuns' Dad -- I didn't know you could eat raw potatoes! I thought they were poisonous that way! Huh!

Thanks, again!

You will be very happy if you make Michael Chiarello's Parmesan oven baked french fries. You will find it at Food Network.
