Help? Gluten Free homemade crackers?

Hey all! I just lost my job, and am trying to be super creative with what I have on hand.

On Thursday we have homeschool coop all day, and I want to take chicken salad. I am low carb and will eat with avocado, but my kids will eat with crackers and carrot sticks, etc. I have flours, oils, and eggs, milk, and some various nuts on hand, also cheese.

Anyone been there done that? I usually love experimenting, but really would like a starting point for this, as I don't want to waste anything right now.

I love THESE when I was GF. They never looked like the ones in the picture but they were good!

I made my tortillas last night (tapioca starch, buckwheat flour, sorghum flour, shortening, salt, water, gum) and sliced them with a pizza slicer into triangles and deep fried them. They came out more like pita chips than tortilla chips (which was my goal) but they were really good.

The easiest one in the world for me are almond thins - 1 c almond flour and 1 egg white. Lay out tiny little pieces (size of your small fingernail) on a silpat/parchment paper, and flatten with a wet glass to about the size of a 50-cent piece. Bake them until they're dry (325 for about 10-15 minutes, IIRC). Store them in an airtight place, and if they go stale (get damp), just recrisp them in the oven.

The other easy one is cheese crisps, but they're not nearly as suitable for dipping something chunky, they're very fragile.
