All the suggestions above are great! I encourage fried foods- egg rolls and chimichangas! Also, you can pack on more calories by drinking beverages. Water is good, but juices, nut/rice/soy milks, even the occasional soda pop will provide calories in addition to hydration. Also, keep your favorite desserts in stock! Try the non-dairy ice creams and vegan brownies (no eggs), they're pretty yummy.
