Breakfast Burritos, or Freezable Breakfasts

I am trying to find tasty recipes for breakfast burritos. I've never made these before but they sound good.

Also, what other kinds of homemade breakfasts are easily freezable and reheatable? what about baked oatmeal? Can I freeze it before baking it?

Looking to expand our breakfast horizons, with healthy, wholesome meals to start our day that don't involve a lot of prep from me.

At our house, we make breakfast burritos by stirring, in a bowl, any leftover burrito-type stuffings we have with eggs to make an extremely gross looking mix. It gets cooked, scrambled egg-like in a pan, and rolled into tortillas with a bit of cheese. Super easy. My plan is to make a bunch and freeze them but I've not gotten around to it yet.

I'll have to subscribe to this thread and hope there are some tasty ideas. I'm getting sort of tired of our breakfast burrito routine. But I'll share it:

I scramble about 8 eggs in butter
Then I mush some salsa with some refried beans
Then I steam tortillas (over a pan of boiling water covered with a flat mesh thingy)
I just scoop some ingredients onto a soft stretchy tortilla and roll 'em up!

Usually we throw them in the fridge and my dh can microwave them for about 30 seconds on his way out for work.

I'm trying to keep them meat free and dairy free, but I am not sure how to make them tastier. I am so un-creative with spices and herbs. When I try to be creative, it usually turns out badly. I follow recipes to the letter!

My fav. is leftover grilled asparagus, eggs, and cheese. I like a dab of salsa on each one.

I make a breakfast casserole almost every week that dh and I can eat all week long. I just fry some potatoes with whatever leftover veggies and meat we have, toss that in a baking dish topped with beaten eggs and cheese. And then bake.

Breakfast burritos are usually fried potatoes and veggies, scrambled eggs, cheese and bacon or sausage if we have ready. Wrapped up in a tortilla with salsa and sour cream. Or sometimes I'll just put my breakfast casserole in a tortilla and eat it that way.

Yum, I'm so going to try that! I'll probably add cheese too since I don't mind dairy, and maybe a little cilantro?

How many tortillas does it make? How many tortillas make a breakfast?

I usually brown bacon/ham/sausage in a pan with some onion and bell pepper (no onion if I'm making for DH, he hates them) and then I add eggs over that, and wrap it in a tortilla with cheese and serve salsa on the side. I love mine with chorizo, not sure if kids would like that though (my LO is only 5 months, to taste tester for me yet!).

subbing. breakfast gets boring, i need new ideas. i dont really eat ggrains, thugh and am wondering if anyne has made japanese-style egg "trtillas" or pancakes that are basically a flat scrambeled egg? and then tried stuffing it and rolling or would this just fall apart?
