cheap veg meals?

My dh is going to begin full-time school this summer.

I am looking to comprise a list of cheap snacks and meals. I have been using the past few months to try and reduce our grocery budget. I am not having much luck. I am trying to replace our nuts with sunflower seeds because they are much cheaper.


My cheap meal list already includes:

Honey baked lentils
dahl
beans and rice
bean burritos
spaghetti with white beans
Bean nuts

Our list includes lentil tacos, 3-bean chili, homemade falafel, homemade hummus, chickpea curries (with and without coconut milk), homemade black bean burgers and so forth. Vegweb was a good resource for me

How about soups?

My kids love black bean soup and it costs me about $4 to make a large pot of it if I used canned beans and about half that if I use dried beans. I serve it with some homemade bread (about $0.50 - 0.75 a loaf) and it is a favourite meal here.

Soups and stews! Especially good if you have a crockpot... Because it's cheap, and it's easy for busy mama's. Throw all your beans, lentils, and spices in the pot in the morning, play all day, and it's ready for dinner when you are.

My crockpot has saved my life. I think I will have it bronzed and put it on my mantle.

Not just spaghetti, but all types of pasta are good too-
