Being pregnant and subject to bouts of "OH MY GOD!! FEED ME NOW!", I just came up with this delicious little snack or meal. Yeah...at 2:30 in the morning. From start to first bite was under 10 minutes.
Serves One
-8" flour tortilla (I used Mission whole wheat tortillas for the fiber)
-1 Tbsp cream cheese (I used TJs organic whipped CC)
-1 wedge of laughing cow cheese or 1 Tbsp other spreadable cheese (I used the herb and garlic, but you could just dbl the CC if you don't have any other spreadable cheeses)
-About 1/8 cup shredded cheese (I used a white/sharp cheddar combo)
-1/4 cup black beans (I used organic canned)
-Pepper to taste
Spread the tortilla with the cream cheese and the wedge (I spread it half on one side, half on the other). Add pepper--just a shake or two was fine for me. Place on a slightly greased pan set to medium heat. Sprinkle with shredded cheese. Top with black beans (I warmed mine in the microwave for 20 seconds) making sure they're pretty evenly distributed. Cook for about 4 minutes, fold in half--if you spread cheese half/half, make sure to fold it so that the CC half goes on the wedge half. Cook for another minute on each side or until golden and crispy.
It sounds (and is) so simple, but it was so satisfying! And it stayed crispy on the outside, gooey and creamy and cheesy on the inside till the last bite. It was very neat because it wasn't over stuffed there was no spillage at all, and no dishes to worry about--i just wiped the pan with a clean dish towel.
The two things I love most about this is its potential and its versatility. For me this was a snack, but with some elaboration, this will be a meal for me and my son. Plus, i made it after raiding the fridge, with leftovers and staples that I usually have on hand. It's easy to play around with and substitute.
Some additions I plan on trying out (though not all at once) include:
Hot Sauce (sriracha most likely)
Corn
Chicken (I'll try grilled chopped breast or thigh)
Beef (thinly slice leftovers from a stir fry I'm thinking)
Different types of shredded cheeses (pepper jack and mozz come to mind)
Shredded Lettuce or Cabbage--after the pan frying
Refried Beans
Side of Salsa or Guac
