Insanely Yummy Recipe

It was so good that my 11 year old said it was the best dinner I have ever cooked. Wow.

Creamy Scalloped Potatoes

I did a couple things different than the recipe stated. First of all, instead of cooking the onions in just butter, I cooked them in butter and a little chicken fat and coconut oil. I also added chopped up leftover pork to the top the dish and doubled the cheese. I also kept it on the stove top a little longer than I should have, but it didn't seem like a lot of liquid and I was worried that the top potatoes wouldn't get done.

I just can't leave a recipe alone, can ya' tell?! But with all my tinkering it turned out delish. Oh so yummy.

This will definetly be a potluck dish as well as a family classic.

P.S. I love having real milk in the house. Pre-TF I would have only had regular milk, not cream and I don't do store runs for special ingredients. I tend to sub. But now, I always have a nice cream top waiting for me. I think the cream really made a nice sauce. My kids said I should try making just the sauce for mashed potatoes...Hmmm....

MMMMMMMMM one of my all time favorite dishes. Must try this one!

Oooo... what to do? I have all the ingredients, except I'll substitute yogurt for cream since I don't tolerate straight cream. My parents are coming into town, and my dad is on a low-fat diet. Maybe I'll make it before they get here, eat some, and stick leftovers in the fridge for high fat snacking while I'm eating low fat meals with my dad.

OK, I made it. My one-year-old smiled and said: Ah, ah, ah and signed "more!" I think it's pretty good, but I'd add more cheese. 2 oz really isn't that much. I think I'll add more on top of my leftovers when I reheat them. My cheese was turning brown after about 15 min in the oven, but my potatoes really weren't done, so I threw it back in for another 10.

eta. The yogurt substitution worked, but I'm sure real cream is better. Off to clean the house for parents. No more getting sidetracked to cook....

I agree, 2 oz of cheese is not enough. I doubled it. I too cooked mine longer than the recipe stated. But I did so before I added the cheese. HTHs.

Oh, can you tolerate soured cream or cultured cream? Of course, if yogurt worked well for you then no need to mess with a good thing. Just an idea.
