What are you eating?

After only wanting fruit for the last several months I think i'm finally having cravings for real meals. Since we were in the hospital also I was getting served 3 square meals a day as well! Not great food or anything but way better than corn dogs and pizza! (of which i have had for lunch, dinner, and lunch!)

I need something EASY for lunch. I always have cereal for bfast (and grape nuts are oh so delicious right now...weird) and I should be able to start cooking dinner again...maybe. but lunch has me baffled. I was eating lots of lunchmeat sandwhiches (yeah i know!) but i'm kinda sick of them. I am not fond of leftovers (and the fridge is cleared of them all right now since i haven't used a pan in 2 weeks) so what do I eat? Whats yummy, quick, filling and not to off the wall (like please no hummus on tofu with kefir spread or something like that...lol).

So write me your lunch/easy dinner menu's that you've had or like to have or will have.

I'm having the same issue. We cooked tons of food for postpartum, but didn't think of lunches. Luckily I have a wonderful friend who has brought me lunch many days. I've eaten a fair amount of junk, too (pizza rolls, etc).

Here are a couple of ideas:

Nachos. Buy a bag of chips, a bag of shredded cheese, and then whatever toppings you like (I bought a can of black beans). I just microwave. Not the best nachos when microwaved, but definitely the easiest.

PB&Jelly. If you use natural peanut butter and whole wheat bread, then that's good carbs and protein. Consider the jelly dessert. And a serving of fruit if you use preserves or something.

Pasta. If you're not eating this for dinners already. Some whole wheat noodles and a jar of sauce equals a pretty easy meal.

oh, and i should add that honestly, i'm not doing a good job of eating at all. everyone talks about how important it is, but i'm not really that hungry and i keep forgetting to eat. one of the breastfeeding books said that lack of appetite is pretty common in the first couple of weeks, and it does seem to be picking up, so that's good, at least.

In our house, lunch is for leftovers, otherwise we'd never eat them. If there aren't any leftovers (rare, since my kids think eating after 3pm is for suckers) then I eat a cheese and egg bagel, or a frozen potpie (the crazy high in sodium, probably going to kill me kind). DH makes breakfast (oatmeal) and dinner (we still have a freezer full of meals people brought over, so heating up a meal and bringing home bakery bread is easy).

I also just snack all day long, and DH has been good about making a big fruit salad a few times a week, and he cuts up veggies and we keep a big bowl of them in the fridge for quick munchies. The fiber is helpful.

I also have been known to make a meal out of apples and peanut butter, or graham crackers and cream cheese. At least it's better than coffee for 4 meals a day, which was what I was surviving on after DD2's birth.

This exactly. I hate eating. If I can't eat it in a couple of bites, it ain't happening. The staples of my snack basket are sliced cheese, lunchmeat, cheez-its, cut up veggies and jerky.

I hate lunch. Lately its been pb on toast, chips and salsa, pancakes, cereal, kraft dinner, bagel bites.

No baby yet... but Ive been buying cheese ravioli or tortellini from the freezer aisle and we (the kids & I) love it. You can use red sauce, alfredo sauce or I like EVOO with herbs & parm cheese! I make that with some frozen veggies pretty often.

I also like making chicken quesedillas with canned chicken, queso form a jar (so bad I know) and shredded cheese, heat it up in a skillet with the lid on and mmmm mmmm!

Other than that, pb&j, tuna salad, grilled cheese or leftovers. I don't do fancy either.

mmmm tuna. thanks for the reminder! i forgot about my early pg tuna craving plus WIC gives me tuna so i'll have to keep that in mind. guess i should also use egg salad sandwhiches since we get free eggs too...

yum nachos! i think i'm going to be doing LOTS more tacos from now on. ds will eat it (a feat in itself), it's easy, its HEALTHY (i use baby spinach instead of lettuce plus refried beans and handmade tortilla's) and i can load it on chips for a change of pace.

i had a craving for raviolli during pg...i was NOT impressed with safeways rav...i still have it sitting in my freezer..then again i am not a tomato sauce fan. will maybe try it with alfredo instead.

pb&j~ i do have nat pb, whole wheat bread and plan to make some straw jam again so it is healthy however this is ALL ds eats and i am throughly sick of making it for him!

i'm thinking french toast tonight...maybe i should pick up some texas toast while out shopping...yum! cinnamon on it too...thats IF i can get reeve put down long enough to cook.

BF isn't home at nights (cept fri-sun of which 2 nights we probably end up eating at family or out) so it's REALLY hard for me to cook. i really don't want to baby wear while cooking considering how uncomfortable i feel just BW normally.

c'smama~ i was like this during pg. i pretty much only wanted cut up fruits and veggies to eat...i didn't want to think about real food so i'm really due for some real meals and craving real meals. i lived on carrots, berries and cucumbers!

rhi~ i wasn't hungry for the first week at all. i kept forgetting to eat lunch (v very rare for me!) until i started shaking. i am now HUNGRY though. thankfully not "clean out the fridge" hungry cause i really do want to loose another 10+ lbs!

I have been really hungry but too busy/ overwhelmed to eat, which is not good. I try to eat 3 meals plus lots of snacks otherwise I get really shaky (I also lost a lot of blood during delivery) but I can see already that I will lose a lot of the baby weight quickly due to not enough eating time, stress, exhaustion, nursing. I overdid the eating during pregnancy so it's fine to kinda balance out now - but I already miss eating to enjoy my food, and not just so I can continue being a milk factory. Hmm.
I find that premade soups from Trader Joe's plus a few slices wheat toast make a good lunch, but they're not super filling. Just an easy thing to tide m over for a bit.
I'm eating Rolos right now so I shouldn't even be on here making recommendations!

I don't forget to eat, but I do end up getting satisfied quickly, which is a welcome change from late pregnancy. Sometimes I catch myself eating past being satisfied, out of habit.

Today lunch was veggies (carrots and green peas) and corn chips dipped in hummus. Easy, just grab packs of everything and dip.

Yesterday it was fried turkey sausage patties (from freezer) and steamed cauliflower. Somewhat easy. I didn't have to stand there, while everything was cooking, just flip once. Oh, and well, coconut ice cream for dessert.

And, of course, left-overs, if there are any

Oh, and DS's favorite for something quick is almond butter and honey sandwich, usually on sprouted bread or bagel, since that's what I buy.
