Strict veg with food sensitivities??

Has anyone stayed strict veg or close, with multiple food sensitivities? Anyone done an ED and eaten very little or no animal products?

I'm struggling with this, and need ideas and opinions. I'm on an ED to figure out what ds is sensitive to. We think he's sensitive to salicylates (in most fruit and many veggies) plus something else. 2 months worth of food journaling hasn't given us an answer, so I assume it's a food chemical. I'm having a hard time sticking to an ED lomg enough to know for sure what's safe or not.
The only definite is that he's sensitive to sweet potato.

I prefer not to consume dairy and eggs (though I'm not overly stressed about tiny amounts). However, I have two concerns- the first is nutrition. I'm nursing, so of course I need enough fat and protein. Secondly, it is really hard on me to be so limited in my foods. If I cut out animal products, I have even fewer options.

There are about 15 foods that are likely safe for him and me. Of those, 5 are animal products (butter, cow's milk, ricotta cheese, eggs, and chicken which I stopped eating now that beans are ok).

The other foods he/I can eat are:
black beans, lentils, limited cashews, banana, pear, apple, romaine lettuce, asparagus, flax seeds, rice, quinoa, and millet. I can also have sea salt, canola oil, white sugar, and waffles I make out of the quinoa and millet. That's it- no herbs, spices, etc.

Is it possible to be healthy enough on only the latter set of foods, if I take out the dairy and eggs? (I know it's short on veggies- that's my focus on what to try next). Is it better to keep the animal products in for now, and cut them out once I've added more foods?

Any personal stories or opinions are welcome and appreciated.

My 11 week old is forcing me to do an ED as well. I've already eliminated dairy for the past 4 weeks and it seemed to have helped, but I think there's more to go. I'm vegetarian and looking for tips from others on nutrition sources.

IMO you can if you able to add more variety of veggies in. Good luck to you!

Hi fellow allergy thread mama!
We have heavy allergies to dairy, eggs, and honey (if you feel that way), and that just leaves meat. I have been leaning towards no meat and have been spending lot of time pondering that and what would be best for my children right now.
My choice is to go easy on the animal products for now. I do worry about nutrients but worry even when we do consume meat too. With the warm weather coming and all the fresh veggies, I just feel so good about not eating meat for now. Plus we are adding in new foods all the time that were originally allergens with no problems now. It was just a matter of helping our bodies deal with the food chemical sensitivities with nutrients like molybdenum, magnesium, b6, and especially omega 3's (from flax oil, CLO didn't cut it for us). I am sick of avoiding foods and now I am eating so much more.

That's just it- the most likely food chemicals are mostly found in produce. It could be a few weeks before I can add more produce. One problem is that I try to add it too fast- I hate not eating many veggies. But when I add them, I don't know what's causing the reactions, yk?

I *still* haven't gotten mo . I thought that eating beans would do it- I'm eating probably 2 cups of beans or more a day, and ds is eating some too. That's it- today I'm ordering some. Right now, in fact.

Thanks for sharing about the flax oil. I'm eating flax meal, but it can't hurt to try the oil, right?

I think you could do ok in the interim if you are able to take a multivitamin. Sounds very frustrating.

I eat a ton of beans and still it is not enough moly when dealing with allergies.
And for the flax, we used the flax meal and chia seds, and even CLO, and none of those even came close to what the flax oil WITH lignans have done for us.

Now we do eat chemical foods (sals and amines) and have no reaction, but if I slack on the moly and flax oil, rashes slowly creep back. I found that once we got our moly levels up, we could go a few weeks without supplementing. We are dealing with alot of mold and other chemicals environmental wise, and are living behind a factory. We have only had high sensitivities since living here and I think that our "bucket" is full and we cannot handle may foods. So hopefully when we move to our new house in a month, we will not have to take so much moly and such since we will be in a cleaner environment.

To tie this into a veggie thread, I wonder if us eating alot of meat was a cause of us having such low levels of moly. Not necessarily from the meat, but we would eat the meat instead of the beans when we needed a protein, thus our levels of moly would go down. This is a reason why we are sticking to more non animal foods. If I cook steak and beans, my 3 yr old will only eat the meat.
