What are you Canning this year?

I would love to get back into canning this year. I have a 23 quart Pressure Canner. It's been several years since we have done anything.

My goal this year is:

Italian Tomatoes

Rotel Type Tomatoes

Plain Tomatoes

Dill Pickles

Bread and Butter Pickles

Salsa

Probably anything else I can get my hands on.

Maybe fruit preserves and or jelly.

Anyone else want to share notes and recipes?

This is on the agenda for this year:

-jam
-dessert fruit sauce (jam without the pectin)
-pie filling (now and also later when apples and pears are ripe)
-chow-chow
-tomatoes
-beans
-corn
-peas
-marinara/pizza sauce
-salsa
-lamb
-beef
-chicken
-meals (stews, chilis, soups)

Whatever else I happen to get my hands on.

- jam / jelly
- salsa if I can finally find a good recipe - in metric
- actually, I could try spaghetti sauce (probably a lot cheaper during "out-of-season")

I'm going to can all our tomatoes this year, because last year I froze some of them, and then ran out of room in the chest freezer and had to compost perfectly good fall greens for lack of anywhere to put them.

I'm also expecting to can:
jams-- strawberry, raspberry, plum, peach, apple butter
sliced fruits-- apples, peaches
cucumber pickles- haven't decided what types yet
pickle relish with peppers and onions
pickled cabbage

I may do more. It depends on what's coming in from our gardens and the farm, and what's cheap in the farm markets.

I'll be canning tomatoes again this year, though probably mostly buying said tomatoes (we have soil issues that make our tomatoes die every friggin year, its very discouraging...

otherwise:

pickled jalapenos
pickled banana peppers
dill pickles

jam/jelly of all sorts
apple sauce
apple butter
apple cider

Strawberry Jam
Blackberry Jam
Blueberry Lime Jam
Applesauce
Tomato Halfs in water
Italian Seasoned Tomatoes
and maybe some peaches and pears
there's also a recipe for peach bbq sauce that I'm tempted to try.

KatWrangler where did you find a recipe or guidelines for Rotel type tomatoes? I'd like to do something like that too.

I usually go to a local pick your own berry farm and pick strawberries and blackberries and make enough jam to last us the year. I let the season slip by last year and we really missed having the homemade jam.

My DHs grandmother has blueberry bushes and we can get all the blueberries we can use from her for free.

I just canned some dried pinto beans mainly to get familiar with the pressure canner since it's new and I plan to use it for the tomatoes.
