Help! need recipes for toddler

I need help! I have a toddler with a mind of his own He's lactose intolerant (though we do give him some lactaid and occasionaly cheese) and has some texture sensitivities. He loves a chewy, rough but not pitted texture...think cereal bars. Nothing smooth like pasta, bumpy like broccoli or fiberous like pineapple. I'm dying here. He used to eat nearly anything, now he's ruled by texture and temp. I have to get the kid to eat something. I figure if we can make affordable, organic, dog biscuits, there's got to be a kid equivalent. Please, help me!

DD used to eat almost any kind of purée if I spread it on toast or rice cakes. We used to do a lot of puréed beans with vegetables. She liked it with garlic or lots of paprika, nothing to bland.
