Calling all cookie bakers!

I love to bake. Yeah, I know - not the healthiest habit, but the kitchen is the only place I have time to be a little creative these days!

I'm looking for healthier cookie recipes - especially ones that a three-year-old can help with while I have a baby on my back (so, nothing too putsy). We're not allergic to anything, not gluten-free, etc, so nothing to work around. I eat healthier; my husband prefers to eat more mainstream.

So, bring on the recipes!

I'm not exactly sure where this came from, but one of my friends shared and it was love at first bake!

Makes a HUGE batch. I use palm shortening from Tropical Traditions. That stuff has revolutionized my baking. I can make biscuits and pie crust and all things with shortening without feeling too guilty! You could probably use all butter though.

Date Oatmeal Raisin Cookies

1 cp butter
1 cp shortening
3 cps sucanat or 2 1/4 sugar
4 large eggs
1 TB vanilla
3 1/2 cps flour
2 tsp baking soda
1 tsp salt
1 TB cinnamon
6 cps oats
1 cp raisins
1 cp dates, chopped

Proceed as normal for cookies - cream fats and sugar, add eggs, etc...

Drop by spoonfuls, slightly flatten and bake at 350' for 8-10 minutes.

The only thing is I find her recipes are too sweet for my tastes, so I use less sweetener than she does.
Some of the recipes in MDC have turned out quite well too.

I love to bake, too - it's definitely healthier to do it yourself than eat the packaged stuff!

I made these last Christmas & they were a hit. The only thing I changed was used orange zest instead of the candied orange peel. I like making bars - even easier than cookies!

I'll think of more & come back.

One of our easy go to recipes for cookies is

1 C natural peanut butter
1 C sugar
1 egg

Mix it all up & I like to the the criss crosses with fork tines. Then bake at 350 for about 10 minutes!!!
