Super healthy , super quick pancakes

I stumbled upon this recipe - made it this morning and my kids sucked it down like it was crack candy.

Keep in mind that both my kids HATE cottage cheese and they had no idea it was in there.

1/2 cup cottage cheese
1/2 cup oatmeal
2 eggs
1 tsp vanilla

Blend in a blender and make pancakes as usual.

I didn't taste them because of the diet I'm on but my kids adored them.

Super quick and easy, full of protein and fiber...... Just thought I'd pass it on.

ooooh, that just might convince me to buy some cottage cheese just to try!! It even sounds quick/easy enough to make in the morning!! Maybe.

Seriously - start to finish it was minutes! And, these pancakes flipped so easy. They held together, didn't tear apart and smoosh all over the place.

This is our new morning staple.

Thanks! I will have to try this, I love quick and easy. Instant oats or rolled oats? (I assume it wasn't steel-cut.)

I used rolled but, since they're being ground up, you use either rolled or quick oats.

I think these would hold up well to additions so next time I might try blueberry or maybe add some banana and walnuts.

Yum! Thanks for sharing...I'm going to give it a try next time I get to the store and buy some cottage cheese! Add ins sound great: ground flax, shredded carrots and/or sweet potato, blueberries,...oh, the list goes on! I bet you could use ricotta too. I <3 ricotta cheese!

I just bought a big tub of cottage cheese and want to try this recipe, so thanks! Dis your kids eat them plain w/o syrup?

My kids ate them with syrup but, I'm going to try banana and a few dark chocolate chips and use them as a snack.

I love the idea of shredded carrots or sweet potatoes - I'm thinking you'd have to cook the sweet potato first since these only cook for a minute or two on the griddle?

That is similar to my breakfast and often lunch as well every day. I do oats, flax, banana, eggs, spinach, cinnamon and vanilla. Some days I don't use oats, just flax and almonds.

My 2-year-old is super picky but likes pancakes, so I may have to try these. Thanks!

For me, I use 12 grams which is i guess 2 tblsp GROUND flax, 1 ounce almonds, TONS of spinach (you can start with a little or none) pinch each cinnamon, ginger, nutmeg, cloves or just cinnamon (I like pumpkin pie spice though) pinch stevia, half a large or one small banana, 2 eggs and some vanilla. Just tried this recipe. I halved it since it was just for me, and got 2 small/medium pancakes which was perfect. I could really taste the egg it seemed, almost like with french toast. I made a strawberry topping (just microwaved some frozen sliced strawberries with a bit of sugar) which was great over the pancakes. To me the taste wasn't good enough for stand-alone pancakes but they did make a healthy vehicle for a yummy topping.

I think you might be right. I started adding vanilla and cinnamon to the batter and the kids say they like them even better. I've even added walnuts and banana to the batter and they love them.

I think the batter is a good base but, it can definitely be improved with add ins.

I thought about this some more, and I wonder how it would be if I replaced the egg with banana? I've seen that done in vegan baking recipes. I think the banana would provide a much nicer flavor. I also like the idea of adding cinnamon. I just bought bananas today and they're not quite ripe, but I think I'll try again in a few days and replace the egg with banana. I'll post an update then
