Super healthy , super quick pancakes - Page 2

OK tried these again today, doing the full recipe and subbing in banana for the egg. At first I just used one medium banana, then blended, and checked the consistency. It seemed too thick so I did add one egg. I also added a dash of cinnamon.

The verdict... the flavor is much better. The banana overpowers the egg. I think it might be even better with more vanilla. The consistency, though, is not so good. I'm not good at pancakes anyway, but I really struggled with cooking and flipping these without burning the first side. That could also be because I was wearing my 2.5y/o in a rebozo while I made them though . The final product was not light and fluffy pancakey goodness, more dense.

if you watn them fluffy t hen a tsp of lemon juice/or vinegar and a pinch of baking soday

Anyone have a suggestion for subbing the cottage cheese? Yogurt perhaps?

I'm definately going to be trying these tomorrow. I even bought the cottage cheese especially for it today.

I'll be making changing it slightly though to make it more of a conventional pancake...Probably lose an egg, add some flour, some honey or applesauce, and baking powder to lighten it all up. Should still be good, right? <crosses fingers>

Tried these today, just the thing for breakfast! Tomorrow I'll try again (I've had some cottage cheese sitting in the fridge that needs to get eaten!) and add something to make them fluffier.

Ok, so I made these today. Made some substitutions though...

I added a 1/2C of flour (to make it more pancake like), omitted 1 egg, added a TBsp of sugar (I know, bad of me but we don't have any syrup on our pancakes), 2 tsps of baking powder, a Tbsp of oil, and a couple splashes of milk to make the blender blend.

The texture was light and fluffy, it was fantastic! There was enough to feed both kids and me with 2 measly pancakes left over which will be *my* afternoon snack.

These have become a regular breakfast item in our house.

I make up a batch (original posted recipe, no alterations) and it makes two days worth of pancakes for DD an I... three if I make them a little smaller. The batter stores well in the fridge.

I like to pour the batter in the skillet, then add 4 or 5 slices of banana. Very tasty!

Just wanted to mention that I've been making these in my waffle maker and have substituted both ricotta cheese and yogurt for the cottage cheese and both have worked wonderfully!

They yogurt makes them a little thinner, the ricotta is much like the cottage cheese.

But, it's nice to know that there are options depending upon what you have on hand.
