Make oxtail soup!

Just use your own beef broth and regular canned diced tomatoes.

Ooh! Make pho!

I never use as much beef/bones as she recommends and oxtail is perfect for pho. Whenever I find oxtails at the farmer's market, I know what I'm making. Or maybe I'm the only one crazy enough to make a soup that takes hours to cook

caldo de res

hey there! my husband is from mexico and his mama makes this soup, and i now make it suuper easy oxtail and water in big pot, chunk of onion(take it out later), couple whole cloves garlic(take out later) simmer with sea salt really slow after an hour or so(not a science could be shorter, but the longer it simmers the more flavor you get) add veggies, carrots, potatoes, zucchini, whatever and a maybe 10 whole sprigs of of mint continue to cook slow until veggies are cooked well done!!! i make a salsa on the side of roasted tomatoes and garlic, salt, with chile de arbol you serve that with the soup people can add it or not i make homemade tortillas and those of course go with it like any mexican meal!!! enjoy!
