In terms of not breaking them, just go really really slowly (drop by drop) as you near the end of the oil. A big egg yolk can take a cup of oil, but a smaller one, obviously can't. It can take some practice.
THANK YOU!!!! by the time I was on my 4th egg yolk I could get the emulsion not break until I tried to put in the last 50ml of oil and then failure.

I was scratching my head about it for days trying to figure it out!!

I can't stand EVOO mayonnaise either. I used to use canola, but even that tasted a bit like drinking straight oil to me. Now I've gone TF it isn't an option... bacon fat sounds intriguing, but it'd take me forever to save and render enough. I wonder if I could find expeller-expressed sunflower oil around somewhere? We're not huge mayo eaters but DH likes potato salad in the summer...
