Taxes on farm gate sales

If I have my own chickens for eggs, a large veggie garden etc and I sell the extras, do I have to claim that as income to be taxed?

Do I need insurance?

I think if it's under a couple thousand than you don't need to claim it... check the gov't website to be sure.
