Seaweed

I'd REALLY like to get some seaweed into my diet...but everytime I buy it, I never eat it. I've tried seaweed chips (cutting into pieces, frying in a little oil) but they turn out so oily or they cook too fast or they seem to take forever to cook. I don't know what I'm doing wrong.

I've tried it in soups but I am not a fan. I don't tend to eatr it in salads because I prefer salads to be super easy i.e. out of the spinach tub with a little oil and vinegar.

Any suggestions for something EASY and preferably quick?

we soak dry beans over night with kombu- we toss the piece the next day but have lots of the +++ from it (we don't drain the water-we cook the beans in it)

I do beans in kombu as well. I sometimes soak it with, sometimes just cook it with. I change the soaking water, so if I soak it with, I transfer it to the new water. If I'm cooking the beans for a mushy dish (we love our beans in beans and rice really really mushy, or for hummus or for refried beans), I'll cook them really long and slow, the kombu sometimes falls apart a bit, and then I leave the littlest peices in the hummus or other bean dish.

I've had a kale salad with wakame with brazilnut/garlic dressing that was super yummy. I wish I had the recipe.

I also love those little green fresh seaweed salads from sushi restaurants, but I don't know how to make it at home, or if it's healthy.

Kombu or kelp is one of the most nutritious seaweeds, so mostly, I rely on using it in beans. My DP likes the taste of lots of seaweeds like nori and wakame as a snack, but I certainly don't.
