Does anyone have any good suggestions for diaper sprayers? I'm not very handy around the house, so it would need to be something extremely easy to install. I have seen good reviews on the bumGenius ones, and have seen the FuzziBunz ones online. Anyone with experience using either of these? Also, would it be difficult to just get a sprayer hose like for the kitchen sink and set up something like that in the bathroom? It seems that would be a lot less expensive. As I said, I have no real plumbing skills so maybe that's not even a possibility. Just looking for suggestions/experiences with anything.

DH put our sprayer in just as you suggested, with a kitchen sprayer.

If you'll be putting a homemade sprayer in, I'd suggest taking a pic of one with you to the hardware store. The gentleman that helped dh didn't really understand what we were trying to do. lol Also, be sure you get a water pressure regulator (not sure if that's what it's called). If you don't add that you'll have to turn the water down on your toilet so you aren't spraying all over the bathroom. lol While turning the water down isn't a big deal, it does take longer for the tank to fill after a flush.
DH was at the hardware store three times in order to complete the project.

The FuzziBunz/Diaper Sprayer is WAAAAAAY better than the bumGenius/Mini-Shower. I have had both and there is a huge difference. The Mini-shower has this cheap, thin little hose and no water pressure. The Diaper Sprayer has a real, 650 psi hose and adjustable water pressure. There is no comparing them.
I don't know about making it yourself - esp. if you don't know how to plumb - the Diaper Sprayer has a warranty and includes all the right hardware. I'd call that $40 well spent, especially for something that will last for years and be used for so much more than diapers!
