GF vegan picnic ideas?

I am in charge of snacks for the end-of-the-year class picnic at my daughter's preschool. She is GF and there are egg and dairy allergies in the class, as well as a vegetarian. So, I am looking for suggestions for foods that prep easy, travel well and are often a hit with small kids that are GF & vegan. Thanks for any ideas!!!

Well everyone doesn't have to be able to eat every food, right? Or wrong? As in, can you have a meat dish and tell the vegetarian? etc.? Is it just snacks or a whole meal?

watermelon (always a hit with kids) or fruit salad in general
veggies with hummus
chips and salsa
curried chickpeas (good hot or cold)
cookies (can be done vegan, GF)

The kids are only ages 2 and 3 so I've found that it's easier on everyone (less confusion, accidental ingestions and meltdowns), if everyone can have everything. It's a heavy snack/light meal, so I'd like to make sure I serve fruit, veggies, some sort of concentrated protein, a crunchy "fun" food (probably allergen-free pretzels) and a sweet treat to celebrate the end of the school year.

Any nut allergies? A great protein source for the 2-3 crowd would be nut butters spread on GF crackers.

Soy cheese (check the labels sometimes there's dairy in it for some idiotic reason), and get mini cookie cutters and make shapes!

When I was a kid, I LOOOOOOOVED it when my mother cooked up puffed rice and puffed corn in a pan with peanuts and raisins and chickpeas.
You start with a little oil, coconut oil might be really nice, add some salt and pepper and a little curry powder and then toss the chickpeas around, then add the peanuts and raisins and then the puffies. You'll need a rather big pan.
Popcorn is Vegan/GF. How about some popcorn balls?

Also, if you're feeling really ambitious, I made the yummiest apple tarts with crust made with Bob's Red Mill rice flour (recipe on the bag) and I used coconut oil instead of butter. I rolled the crust out and cut it in circles and put it in mini cupcake cups and baked a few minutes before putting filling in them. You could probably buy canned pie filling or even do veggie tarts with tofu and veggies in a blender and then bake. They would bake rather quickly.

Also, if you can find Glutino brand pretzels or pretzel sticks, they are delicious.

Sushi can be vegan, and gluten free. I haven't met a kid who doesn't like Inari sushi. It's those triangles that are made with tofu "skin" and stuffed with sushi rice. Also, if you can buy or make rice balls, my kids love those. I put a small amount of beans or pickled plum inside and roll a ball of rice around it and then roll the rice ball in some roasted and salted sesame seeds.

Chips and Salsa, Fruit kebobs, Hummus and veggie sticks/sesame crackers, baked tofu cubes (you can buy the tofu baked or do it yourself)....

You can also visit an Asian grocery store and you might get some really good vegan and gluten free ideas.
