What's Cooking Veg*ns May 2010 Thread

I thought I'd start this thread even though all we had tonight was spaghetti made with jarred sauce. We were supposed to have lentil bolognese sauce made in the crockpot, but we didn't get home from the grocery store until late. By the time I got the crockpot going and it cooked for 6 hours it would have been 6:00, too late to feed our crew. We normally eat at 5. The irony is that at 4:30 the kids at peanut satay over pasta (ala fast food from Trader Joe's) so we didn't eat until 6 anyways. Oh well.

I think tomorrow we'll have white bean tostadas and tortilla soup. Yummy.

Tonight was an easygoing night: black bean soup (from the freezer), tortilla chips and garlic toast.

DS1 and I also made zucchini spelt muffins from Vegan Brunch today (using frozen shredded zucchini from our garden!). They're really tasty!

Tonight I made an Asian Pasta with Broccoli and Black Bean Sauce (from 1000 Vegan Recipes). My 5yo son and DH both loved it and it was very quick.

Last night I made a quinoa salad with black beans, frozen corn, red onion, tomato and avocado. I made a lime-cilantro dressing for it. It will be lunch today and dinner on Wednesday as well.

Tonight it's pasta with garlicky sauteed spinach and pine nuts and some tomatoes thrown on top. I might toss in some chick peas too.

this month has started out BAD LOL

sat we went for mexican with my aunt. uncle, cousin and dh's parents..I love how my fam and his can get together. It's nice

Then dh was in charge of dinner sun night-pasta with jarred sauce and broccoli

Then I worked yest and dh was in charge of dinner again....what was it? Pasta w jarred sauce and broccoli

I NEED to make sure the kids eat something else this week besides pasta

Tonight I'm thinking is pinto bean soup with masa dumplings, frozen corn and a salad or fresh cut up veggies

Sunday night we had Pasta with Savory Caramelized Onions and Swiss Chard (from my garden!) and a green salad.

Last night we had Sweet Chili Lime Tofu with Wok Steamed Collards (from my garden!) and Quinoa and Thai-Style BBQ Veggies.

Tonight we are having Penne with Spinach and Canellini Beans, and a green salad.

"shrimp" and grits which was really grilled mush pepper tom and onion over grits and spin with sauce...
tonight
breakfast quesadillas and roasted beets and brussel sprouts.

Oooo, I'd like to try this. Can you share the recipe. Alas something at the chard I planted in my garden. I'm afraid it would happen again if I planted more. However, this recipe just sounds so good.

Last nigh I ended up doing romaine lettuce wraps and brownies with fresh strawberries for dessert
Tonight I think I will do something mexican, in honor of cinco de mayo. I have to eat something with my margarita right?

*Saturday: Birthdayparty at LoveBug`s cousin. I had my own veggiepizza with me, since the hosts asked me too. (Speltcrust, mango/pineapplesauce, a little cheese, lots of yummy mushrooms, red onion and sundried tomates.)

*Sunday: Meatballs for LoveBug, beanballs from Veganomicon for me. With rice and veggies.

*Monday:

*Tuesday: Dinner at friends. They made tomatosoup with lots of fixings (pasta, corn, onion, pepper, hardboiled eggs etc) and garlicbread on the side.

*Wednesday, today: Ww spaghetti. Quorn and a sauce of tomatoes, onions, garlic, peppers etc. for me. Minced turkey with the same sauce for LoveBug and his best friend.

Thursday: Noodles, stirfried veggies and some kind of sauce. Haven`t decided yet.

Tonight is whole wheat pasta with a homemade tomato sauce. We'll have sauteed beet tops on the side.

I would love the black bean sauce recipe too!

We had our cinco de mayo meal last night since dh is home for dinner on tues

We had the pinto bean/masa dumpling soup with corn, black olives, and grated soy cheese on top...chilis for dh and I. With a plate of carrot sicks, cukes, and broccoli pieces. I haven't made the soup in awhile and I forget that when I do everyone clears their plates without complaining

dh found a lone baby bok choi in the back of the fridge that NEEDS to be eaten up..so Im thinking a tofu stir fry of some sort on brown rice

Another disaster meal last night! Wanted to use up some oooooold Soy Curls that I found lurking in the pantry, but it turned out they were actually too old = rancid! I took one taste and was so bummed to have to chuck the whole panful. Ugh. Then the Spelt Chive Biscuits I made out of Vegan Brunch were absolutely inedible. I think there is a recipe typo because it calls for 2 tsp of baking SODA when I think it clearly meant baking POWDER - baking soda is soooo salty and they were just AWFUL! I just saved the braised greens for another night and we got Thai food.

Tonight I think it's going to be savory french lentils from ED&BV with chickpea pancake and the aforementioned greens. Wish me better luck!

Tonight I made Tofu Fajitas Yum! I'll be adding this recipe to my regular reportoire. Very easy, quick, and good.
