I have this recipe where I am cooking some carrots, onions, butternut squash and millet. THe thing is it called for toasting the millet in a dry pan first. So i did that for a bit......... Then i added the vegetables, covered with watter and turned it up high enough to almost boil.. but simmer.
The problem I am having is the millet is not cooking. it is still hard little pellets... but the other vegetables are now getting over cooked. I have already been cooking it for longer than the recipe stated. Is there any reason why the millet will not cook now? I am puzzled

I wish I had an answer for you. I've taken to toasting mine in the pan lately b/c I like the flavor/texture, but I haven't had difficulties cooking it. Maybe it's been toasted too long or maybe it's the millet?
