Oh, 1 more question. Can you use Coconut flour like regular flour? I would like to make pancakes and my dd is allergic to almonds.

thank you for the support girls!

i use fitday to track too. still working on trying to get my ratios better. i am eating too much meat and need to focus more on tons of veggies and a bit more fat. my favorite new pancakes are 2 eggs, 1 smooshed banana and a tablespoon of almond butter mixed together and cooked at medium. this way they don't burn. i make them small and give them a few minutes to firm up before i try to flip them... this way they don't fall apart. sometimes i chop up spinach and mix them in. then i serve them dripping in butter. my littles love them too. my new kryptonite is frozen bananas... better than almost anything else for me... but they are high in carbs so i have to teach myself to savor one. i haven't melted dark chocolate and rolled them yet. have to save that for when i hit 130.

oh and i am supplementing with omegas now to balance out all the omega 6 i am eating in the chicken mostly. added probiotics... now i just need to find a good source of D3?

crunchymama I'm getting closer all the time. I had a wicked plateau, and then bounced up and down a bit but since starting this challenge, the scale has been creeping down. I'm at 154 lbs. I'd like to be at around 125 lbs so ya, 19 lbs to go!

lisa It's been a while girl!!! I've missed you! Ha ha about girls night not counting! Too true that us mama's need to get our groove on to keep our sanity! Hope you can find some chill time with some good friends soon!

walker67 I thought I replied to your coconut flour post but can`t find it now. Hmmmm

Anyways, you can`t use coconut flour as a straight up sub, it absorbs a huge amount of liquid. I recommend Bruce Fife`s cooking with coconut flour. If you`d like a pancake recipe I can dig it up for you.

Had a binge day. Apparently I can deal with fruit and with super dark chocolate, but the almond flour banana cake full of brown sugar? Sigh, it wasn`t pretty.

Tomorrow is a new day.

On the upside I`ve been hiking and working out lots, so I feel great!!!!

Next weigh in next wednesday.

It has been crazy busy here too...I think it's that time of the year with school ending and all that jazz. I am excited though, I started working for schools last September, which means I am only a few weeks away from my first summer vacation since I was in school!! I can't wait to hang out with my kids for the summer!

Carbs are hanging in there. I have also been controlling calories more and am seeing a difference in the way my clothes are fitting. I need to measure bf, but if I were to guess I'd say it is between 12-14%. I have had some killer workouts, and yesterday had a great run after work on top of the gym. I haven't been running much (Maybe once a week...maybe) but I am running a race this weekend. I ran it last year, it is a 4.7 mile trail run. It's beautiful, and now that I live here I run the course often. I ran it yesterday to get ready for the race and had my fastest run ever on that course. The lady I ran with was baffled, as was I, because I have been pretty inconsistant with running. But I AM fit, and I am thinking that the fact that I am increasing my strength and doing a fair amount of varied cardio (daily pretty much) including HIIT with sprinting at least one day a week has made a big difference.

Sorry, that was really not low carb focused. I have changed my diet to be higher carb in the morning, and lower as day goes on. Dinner is a meat and veg usually. Breakfast is including a banana sometimes, or other fruit. I am still maintaining a carb count below 100, and usually closer to 70, but higher than I was. I do feel better though. I am pushing myself pretty hard right now, and I am feeling much better with the carb increase.

I JUST DID 50 PUSHUPS!!!

That's more than I've ever done in my life! I used to peter out at around 20. I feel like crying I'm so happy and proud and excited! I'm really gonna get there!

Ran my race today in the snow! Crazy cold, but beat my time by 3 whole minutes. Carbs yesterday...not so good, I had a cheat day. Carbs today...not so good, limited choices while out and about at race and then bday party. Tonight and tomorrow are new chances to do better. I need some serious vegetables.

walker67 Sorry this took so long!

Coconut flour pancakes:

2 eggs
2 Tbsp CO or butter
2 Tbsp milk
1 tsp sugar
1/8 tsp salt
2 Tbsp sifted coconut flour
1/8 tsp baking powder (if you use the gluten free double acting stuff you get a puffier pancake)

I don't really like these to be honest, something about the flavor of coconut flour icks me out. But I'm weird, and my kids love them so hopefully your daughter will love them too!

Some variations I've read on MDA forum:

2 bananas, mashed
7 eggs
3 tsp coconut oil, melted
1 tsp vanilla
6 Tbsp coconut flour
1 tsp baking soda
2 tsp cinnamon

I do however love coconut flour for muffins, cakes, cupcakes etc. It produces moist fluffy yumminess!

Muffin recipe:

3 eggs
3 tbsp butter, melted
3 tbsp honey
1/4 tsp salt
1/2 tsp vanilla
1/8 tsp almond extract
1/4 cup sifted coconut flour
1/4 tsp baking powder
1/2 cup of blueberries, or raspberries, or other berries, or chopped sauted apple with cinnamon, or nuts or raisins etc

Blend together eggs, butter, honey, salt and vanilla. Combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps. Fold berries etc in. Pour into muffin cups (3/4 full) and bake at 375 for 18-20 or until a toothpick comes out clean.

wow busy times.....

been workin out hard, eating well. I found out i cannot eat seeds, and it has literally changed my life. I haven't had a stomach ache or bloating in a few weeks and it is such a relief.

I've been sticking to 100 or a little over for carbs. I've been trying to eat more chicken/fish less vegetation because i literally could eat pounds and pounds of veggies every day and never eat a morsel of animal protein, but I know it's not the greatest thing for me.I"ve gone out with my girlfriend a couple times, and just eaten appetizer type things that are decent and it's SOOOO good to just live a little sometimes. One night i drank martinis and ate calamari and teryiaki and man did I feel good LOL. Not a single regret, no time for those!!

hope everyone is enjoying an active healthy life in these early summer times.

Hi all! Just found this thread and I have some questions for you! We are grain and sugar free (actually we are on SCD), but sometimes I still get into a cycle of craving carbs. The only thing that really stops the cycle is to restrict carbs for a bit, Atkins-style, and it really always works. When my weight has crept up on me, doing this always has helped, and I always lose the belly first. However, the past few times I have tried this, I have gotten the most terrible, itchy rash that began on my sides, under my arms, and spread onto my breasts. It was so incredibly itchy that it was just intolerable. The only thing to stop it was to increase the carbs again. What could this be? Is my body trying to detox something?

And, in addition, when I try to lose a few pounds, I do not lose it in my belly area at all anymore. I lose it in my breasts, and right now I would really like to lose ten pounds, but it is not budging. I am eating on the lower carb end, mostly just meat, veggies, and fruit, and some seeds/nuts. But I am not losing at all. I am thinking this is related to just being older. But I really don't know where to start. I want more than anything to get rid of this flabby belly that is pouching out over the top of my pants! Usually this works, but this time it is not. I do not have a huge amount to lose. I am around 143 and I am 5' 7".

The other thing is that before, when my weight got very low, I stopped ovulating. I was down to 124, and only when I got back up to around 135-140 did I start ovulating again. I think it was actually closer to 140.

Any thoughts?
