Okra Recipes

Someone just suggested I plan ocra in my garden. Anyone got any good okra recipes?

Red Bean, Squash and Okra Stew

3 c dried red beans
3 bay leaves
? T olive oil
1 lg onion, diced
2 lg carrots
4 stalks celery
2 small butternut squashes
1 sm red pepper, green pepper,
1/4 jalenpeno pepper
1/4 c garlic
4 c okra
1 T chili powder
3 T dried sage
2 T sea salt
1 t. chili flakes
2 c canned whole tomatoes w/ juice
1 can tomato paste
2 cups water or veg. stock
1/4 c tamari
1 cup cilantro , minced
------Clean and rinse beans. In small pot place beans and bay leaf.
Add enough water to cover the beans. Cover and simmer for 35 min. Beans will not be done , but will complete cooking in time.
In large stockpot , heat oil, onions, carrots. Saute 5 min.. Add celery, squash, peppers, and garlic. Saute 5 min. Add okra, spices, salt, and tomato paste.
In food processor , blend whole tomatoes w/ juices. Add to the pot.
Add the beans, bean cooking juice, and the water or stock. Cover and simmer for 20 min.. Add tamari and cilantro. Serve hot.

my mom made thi and it was awesome. i wanted to eat it for breakfast lunch and dinner. when i made it it wasn't' as great. i can't wait to try again.

My MIL cuts it into disks and frys it in a flour/cornmeal batter. Pretty darn good.

Yummy. I think there's okra on the menu next week!

I saute a few onions in canola oil or ghee, add a bunch of tumeric, S&P to taste, when the onions are soft and taste good I toss in a bunch of okra disks, add a little more ghee or oil, adjust seasonings and cook until the okra is the texture you like. (This works really well with cauliflower too - I serve it with some sort of Indian type of dish and rice)

Saveur also has an okra and tomato recipe in this month's magazine, I haven't tried it yet though.

I do this, except use red chile powder instead of pepper. And add potatoes to the pot before the okra, and let them cook as usual.

I also use frozen okra so they don't get slimy, but if I use fresh, I put a wee bit of lemon to cut down on the slime factor.

I saute onions, garlic and ginger in oil, then add sliced okra, a can of diced tomatoes and lots of curry paste. It's my own easy Indian food.
