I have about 20 lemons - what to do?

I need to use up about 20 lemons and quickly before they rot. Any ideas for a lemon-based something or other? I see so much where there is a lemon here or there but I'm thinking I need a good lemon dessert or or or ??
Preferably vegan but vegetarian ok too.

Why not just preserve them? I saw an article on the planet green website about preserving lemons and I plan on doing it next time lemons go on sale for a good price

You could search the internet for a good lemon curd or marmalade recipe if you're into making those sorts of things.

I made lemon bars a couple of weeks ago from The Joy of Vegan Baking and they were great, easy too.

no lemonade? i make a simple syrup and mix with the squeezed lemons. you can freeze it too. 20 lemons would make about 2 quarts, i think.

if you dont find a recipe for them, just juice them and freeze the juice. i bet you could freeze zest, too.

I would juice and freeze them too - but lemonade sounds good right now!

Just freeze the peels...I do that for ALL citrus fruits, Ive even got my M-I-L saving her orange peels...I just grate it straight from frozen into whatever recipe Im making. Its actually easier then using "fresh" fruit

OK thanks! I think I will make some lemonade and freeze the rest of the juice, if necessary.

As for the peels, call me dense (I am, but learning), how am I going to use up 20 lemon peels? What do you grate this into? Everything? I'm assuming that I'll just juice the lemons and freeze whatever is remaining, right?

Doing my best to USE every part of things I have, so this will be learning for me

if you have a good blender, lemon ice.

My dad is a big fan of lemony things and thinks you should add lemon zest to any recipe which calls for lemon juice But, not everyone loves lemon that much.

I use lemon zest in cakes/icing, slices etc but also pasta sauces, stuffed mushrooms, canelloni filling etc

I have to say it...

When life gives you lemons....make lemonade!

I know you already decided to do that. What you need to do with the peel is to zest it and freeze the zest in 1 tsp amounts.

I would juice them and freeze the juice in ice cube trays. Then, whenever you want lemon juice to add to a recipe, it's there You can store the cubes in a freezer zip-top bag.

Thats a great idea. I keep my lemons in the refrigerator for weeks and they don't go bad. I use lemons in so many recipes and like to have alot on hand.
