Feeling stalled - vegan ideas but "too constrained"?

OK, so I'm wanting to be full vegan and then I fall off - mostly for dairy in recipes or eggs in recipes. Anyhow, the real dilema is that I see recipes but my objective is to be:
as vegan as possible (sorry police)
as few grains as possible, and if there must be grains, gluten free preferred
no sugar, only honey (yes, I KNOW) or maybe maple syrup

I was raw for a time and while it was great, it was very expensive and I missed some things.

I also find so much that looks delicious but just because it is vegan or vegetarian, it isn't always healthy! Like tons of sugar, white flour, margarine.... or I end up filling my menu with 3 cups of nuts a day (everything in moderation, right?)...

Can you see, I'm getting myself into analysis paralysis trying to "do it all" yet I just can't stand the idea of having empty veg*n meals.

Perhaps this seems like rambling, but I'm hoping someone has some ideas to help me - I'm not the best chef but need inspiration just to get going in the right direction.

For example, I LOVE my Horn of the Moon cookbook - all honey (yes, I know ) and I can adapt as needed but, again, a lot of stuff ends up being very grainy.... or I eat soup 24/7.

It seems like if I find one (say, no sugar), then I sacrifice the other (lots of pasta/flour/grain).

I think I'm just in a rut.... anyone have any ideas or know of anyone/book whose aim really is what I'm looking for?

Thanks for any help - I'm dizzy but trying and flopping! And getting tired of the 15-20 things I do know how to make that "meet" most of these criteria...

Drag me out of the quicksand!

Here's a yummy gluten free recipe that is easily made vegan (just leave off the cheese- IMO it's better without it anyway)
Black Bean Chilaquile
I use rice instead of the chips on the bottom layer. I bet it would be good even without rice, but I've never tried it.

I'd guess honey would sub well for the sugar in Oven roasted tofu and veggies

We like this a lot too: Tofu stir fry. I usually do it without tofu, and use kale instead of bok choy.

you need some good cookbooks!

We like

20 minutes to dinner
vegan with a vegence
how it all vegan
the whole foods cookbook

I also plan like this and although it's constrained it helps with creativity if that makes sense?

Monday- a bean based meal
Tues- soup or salad
wed- rice/grain based meal with nuts or beans
thursday- burgers
Fri- pizza
sat- leftovers or eat out
Sunday- pasta

Hmm well we eat low sugar (mostly maple syrup), 100% vegan, whole grains only & mostly gluten-free... I guess that somewhat fits your criteria? I do find it tough when I'm out or trying to buy prepared foods (i.e. the vegan foods are made with refined flours or the sugar-free foods are not vegan & on & on, it's hard to find just the right combination!) But eating at home is less of a challenge since I'm in control

Some of the things we eat are: roasted veggies with pecans... enchiladas... sauteed potatoes with onions, mushrooms, & beans... brown rice with veggies & chickpeas in coconut-milk-based curry (often I leave out the rice)... bean & barley soup... vegetable dumplings or raw veggies wrapped in rice paper (with peanut dipping sauce)... um wow that's all I can think of right now, that's pretty sad lol but maybe I'll come back with more later I don't really follow recipes but I do use cookbooks & cooking shows for inspiration when I hit a lull!
