Please help with healthy meals & snacks for my 1 year old

I am running out of ideas. He loves to eat. I need inexpensive, easy to prepare ideas.....
Right now, he eats a lot of omlettes, pb&j sandwiches, rice and beans, pasta w tomato sauce, fruit, steamed carrots, zucchinis, broccoli, etc.

Please share your ideas!

Are you making separate meals? I would probably just feed him what you're eating - just cut up/mash as appropriate.

When we do make meals, he has what we have. Unfortunately, though, that's a rare occurrence.
We have funky schedules, so sometimes we don't eat till late at night, or we eat at work...and i know it's unhealthy, but all i do for breakfast is coffee, so i need food for him.....

My son's favorites right now:
cheese cubes
yogurt with or without berries
quick sweetened bread (like banana or pumpkin) if you make it yourself, you can make it healthy
meatloaf/meatballs made from ground chicken or beef
oatmeal
pizza - can do this homemade too
peas

hope some of these spark an idea or 2 . . .

Does he like hummus? It's cheap to make, and good to have on hand for a quick snack/meal.

beans and rice
cut up fruit

Mine both liked porridge for breakfast (they still do). We varied it by adding different fruit purees. Actually they were the one thing I made ahead and froze in ice cube trays. We would pop a couple of cubes out and add to the hot porridge, once they were stirred in the porridge was cool enough to eat.

Soup or stew where I could heat up a small amount for them was good.

Cheese on toast, Bean spread on toast. DD was big on eggs, in any form so keeping a couple of hard boiled ones ready to chop up was nice and easy.


About 18months we got into a bit more of a routine with both eating and naps. Then I was able to plan mealtimes more so that they just ate what we were having when we were having it.
