tired of pasta and beans

I was vegetarian for 10 years in my younger days, but I seem to have forgotten everything. we are trying to eat vegetarian 6 days a week. also, my son is allergic to dairy, so no dairy. We do eat eggs. I'm nursing, and hungry a lot, but overweight. Hubby is also trying to lose weight. My 10 year old son needs to gain weight. Lately our meals revolve around beans and pasta. Black beans and rice, bean burritos, beans with polenta, 15 bean soup, split pea soup, pasta with various tomato sauces, Falalfal, hummus and veggie wraps, etc. I need something else, if only to save us from the constant gas! Oh, and sometimes a fritatta. HELP!

Egg salad or deviled eggs? Are nuts okay? Sometimes I just toast some nuts and serve on the side with pasta or another starch and a veggie.

I'd recommend checking out some veggie cookbooks from the library for inspiration! It's hard to recommend recipes to other families, because everyone's tastes are so different (kids in particular can be so picky about veggies/texture and meat-eating husbands can be very picky in my experience, too).

Veganomicon has really delicious stuff (though not all are necessarily quick to prepare). Robin Robertson's stuff is always pretty good, and if you have a meat-lover in the house her Vegetarian Meat and Potatoes Cookbook is a good one (as is 1,000 Vegan Recipes). Crescent Dragonwagon's cookbook Passionate Vegetarian is GIGANTIC and has lots of good stuff, much of it southern inspired.

And of course there's always Vegweb.com.

I hear you, we also eat a lot of pasta and beans!

Noodles or rice with a sauce made from peanut butter or tahini
Potato pancake with scrambled or fried eggs
Stir fries
Lentil curry
Lentil burgers

A quick pasta dish: grate some carrots and ginger and cook. Toast a handful of walnuts or pine nuts. Cook pasta and drain. Combine pasta with olive oil, then add carrots and nuts. You can throw in some tofu if you wish.

Cheese souffle is pretty easy to make, and goes well w/toast and a salad.

Quinoa w/veggies (peas, edamame and olive oil; sun dried tomatoes, basil and olive oil; chop broccoli quite small, saute in oil and add to the quinoa).

Veggie pot pie (think chicken pot pie but leave out the chicken).

Sushi-make the rice and top w/different veggies, or roll up cucumber, avocado, carrot, etc... Make miso soup to go with it. Check out this article in the NYT re: sushi w/o fish:

Go international!

stir fry with bean thread noodles and tofu
spatzle instead of pasta
samosas or empanadas or calzones
chickpea salad sandwiches
polenta topped with fun stuff
shepherd's pie

think about using nuts for protein like on top of or in a casserole or roasted in a pan with soy sauce and butter and sprinkled on top of salads
