Looking for Good Recipes!

My dream recipe website would have recipes for vegan cooking using not too weird ingredients, and with plenty of good flavors that a picky kid would eat. I have perused many Indian websites since we like those flavors, but most of those recipes are long and complicated and would take way too long to put together.

My son is dairy allergic and also very very picky. He is eating a horrible diet and I need to change it, but not too drastically, kwim?

Hmmm...picky kid stuff is hard. What does your DS like? Maybe we can go from there.

Also, have you checked out Vegan Lunchbox? There are two cookbooks (here and here) and a blog.

DS likes fresh fruit, but I am hoping to entice him to eat other stuff. This is what he eats: any fruit or berry, pasta with tomato sauce, chicken noodle soup, chicken nuggets, ham or turkey, meatballs, broccoli, dry cereal, bagels and sweet potato. That is pretty much it. I know, not enough veggies! He does not like anything that is too mushy or slimy - so no oatmeal, no dips or spreads. He also does not like beans, even refried beans, and no peanut butter and no eggs. He does not like chips or tortillas or crackers or even pancakes!! Anything a normal kid likes, he does not or cannot eat it.

So, I am thinking savory or sweet dishes with vegetables or dal as the main dish might be a good place to try.

and so does my picky DH!

I omit the garlic powder and green pepper because DH doesn't like them. Also I make it with red pepper flakes instead of chilli powder which makes it REALLY spicy, but maybe not for kids. (Although if you like indian food...) Cook it less and it's more like a thick soup- cook it more for more of a rice texture. Only weird ingredient is quinoa which you should get in bulk at your natural food store-but you can get it at the regular groccery, too. Good Luck!

That looks good, but it looks like the texture of oatmeal, which DS won't touch - mostly because of the texture I think. He likes foods he can pick up with his fingers (or fork). Sweet potato is the ONLY thing we have been successful at getting him to eat that is mushy. If he eats rice, it has to be sticky rice in chunks.

I am thinking of perhaps either a ball (kofta) or a baked casserole - like corn pudding where it can be scooped out in a chunk that is mainly veggies or beans. Anyone have something yummy like that? Here are the vegetables we do eat around here - corn (I know it's a grain), asparagus, zucchini, broccoli, carrots, cabbage, tomatoes, you know basic stuff.

Neither my toddler nor I like peanut butter, but we both love almond butter. I've heard cashew butter is amazing, but given how addicted I am to almond butter (I gained 5 pounds on the stuff) there's no way I'm trying cashew butter.
