Favorite Recipes... Leafy Greens, Please Share....

I just got my new CSA box full of veggies and am determined to use all of the wonderful, organic veggies. I have a few that I always end up trashing when they go bad.

Rainbow Chard
Mustard greens
Bok Choy

Please share your favorite recipes with me (links are fine too). We are pretty adventurous, but please give me tested recipes that work for your family!

I love greens!

One of my favorites is simply sauteed in oil with garlic and red pepper flakes. Heat the oil, add the garlic/red pepper, then add the greens. Saute until they are tender (5ish minutes usually). Sometimes we have this "as is" for a side dish. Sometimes, I serve it in burritos. It's really good with roasted potatoes, shredded monterey jack cheese, cilantro, diced jalapenos, and a squeeze of lime on a flour tortilla.

Sauteed greens make a good base for frittatas or added to scrambled eggs or in omelets.

I like swiss chard in chilaquiles. http://www.foodandwine.com/recipes/chipotle-chilaquiles You add the chard in with the tomato sauce.

Greens are good in curry or stir fry, too.
