Big salad recipes

My DH and I are low-carb eaters and I'm looking for new ideas for lunch. We do big salads most days and we're in a rut - we mainly eat some form of a cobb salad every day. I saw a recipe for a BLT salad and it sounded delicious. Anyone have a good big salad recipe? Please include the dressing recipe or if it's store-bought, which one?

Sante Fe Grilled Chicken Salad w/ Cilantro Dressing

This is one of my favorite salads...

Sante Fe Grilled Chicken Salad w/ Cilantro Dressing

For salad:
Mixed greens
grilled chicken breast
corn kernels
rinsed black beans
diced red bell pepper
shredded cheese

For Dressing:
3 cloves garlic
1 tbsp. minced ginger
2 bunches finely chopped
1/2 cup fresh lime juice
1 1/2 tsp. wine vinegar
1/2 tsp. cumin
3/4 tsp. salt
1/2 tsp. freshly ground pepper
1 tbsp. honey
1/2 cup freshly grated parmesan cheese
1/2 cup canola oil
1/4 cup olive oil

To make dressing:
Drop garlic cloves and ginger through feed tube while motor is on. Mince well. Add the cilantro and process until finely chopped. Add spices, lime juice, vinegar, honey, and parmesan cheese. Process until well mixed. With motor still running, slowly pour the oil through the feed tube. Let process one more minute.

Notes: You can add crispy tortilla strips for non low-carbers if desired. I also like to combine the corn, black beans, and red pepper ahead of time with a little lime juice and refrigerate.

This salad is more beans than greens, but I love it! The whole website is awesome, too!
