If they like magazines, Cricket is nice. They have a whole bunch of age/subject magazines for kids and you can swap out magazines (if you get one of them and decode you'd rather have a different one, they just swap it for you). So Baby Bug turns into whatever else they might like. And Cricket has ads in plenty of mainstream magazines, and product placement at medical offices, and things like that so she may already know it.
I would probably keep up with the gift cards or checks, but if you want a special gift maybe a charm bracelet for the babe and a matching or similar "mother's necklace" for mom? You could add a small charm every year to the little one's bracelet. And the "mother's necklace" usually has a charm for each child, or something like that. There are basic ones on etsy, insanely expensive fancy ones too, so it could be as individual or as mainstream as you like.

I have a personal believe that EVERY mama, no matter how crunchy or mainstream, needs a ring sling. I think it's also the easiest carrier for a mainstream mama to work with, because almost every mom I know carries their baby on their hip at some point and for that, the ring sling just replaces that arm support. So, if you are looking for something for both mom and baby, that would be my suggestion.
Although, I am also really really big on giving folks what they want, regardless of your personal beliefs (excepting of course something that's truely dangerous for the baby.) So, if she says she wants diapers and wipes, then go with those. If you are REALLY against them, what about some sort of compromise, like making some reusable wipes for her or something (or they probably even sell some on etsy or something.
I do like the other poster's ideas of a portrait session. As the oldest of four, and as a photographer, I can tell you that it's ROUGH to get a portrait, family or individual, when there are six people to manuver. There is ONE potrait of my family when my youngest sister was about 18 months old, then there isn't another until I started working in a portrait studio, and that one was only because I forced it. If you can, perhaps research private photographers, someone who can go to any location, and do some nice, candid style potraits and see if you can prepurchase something.

If the baby is turning 1 and doesn't *need* anything, and you don't want to get diapers and wipes (although I would and have bought dipes and wipes), then get SIL a gift certificate for a massage! Its more about the parents at 1yo anyway! Or send wine or beer or coffee (if I had 4 kids and one was turning 1yo I imagine I would need a lot of coffee!!!!)
