Hey Mamas! We are vegetarian and receive WIC- tofu hasn't been a major staple for us in the past and all of a sudden (thanks to WIC) we had a stockpile of it in the fridge! I'm not crazy about tofu but couldn't let it go to waste so I searched out some new recipies and found one my family is now CRAZY about- searously, I make it like twice a week now 
I have a degree in public health (and am currently working on my MPH) and it got me thinking that other Mamas might be interested in sharing/ learning some new recipes that make use of foods bought by WIC ... I'm thinking about asking the local WIC office if I could possibly do a (or a series?) of 'cooking' type classes that focus on making the most of WIC foods/ different ways to prepare WIC foods/ making the most of WIC checks at the grocery store.
I know WIC offerings probably differ from place to place, but do you have any favorite recipes to share? Tips on stretching WIC foods? Do you have a program like this available to you in your area?
