Making the most of WIC/ WIC recipes (x posted)

Hey Mamas! We are vegetarian and receive WIC- tofu hasn't been a major staple for us in the past and all of a sudden (thanks to WIC) we had a stockpile of it in the fridge! I'm not crazy about tofu but couldn't let it go to waste so I searched out some new recipies and found one my family is now CRAZY about- searously, I make it like twice a week now

I have a degree in public health (and am currently working on my MPH) and it got me thinking that other Mamas might be interested in sharing/ learning some new recipes that make use of foods bought by WIC ... I'm thinking about asking the local WIC office if I could possibly do a (or a series?) of 'cooking' type classes that focus on making the most of WIC foods/ different ways to prepare WIC foods/ making the most of WIC checks at the grocery store.

I know WIC offerings probably differ from place to place, but do you have any favorite recipes to share? Tips on stretching WIC foods? Do you have a program like this available to you in your area?

No class. We get recipes every so often. I think a class like yours would be way better than some I've sat through here where they're nodding and smiling along with people saying they feed their kids something I consider total garbage as a snack. (I'm now having trouble remembering specifically what it was, but it was seriously JUNK) I wanted to applaud for the mom who actually spoke up and said she can't feed her kid that much sugar/dye and does some website called e-mealz...through there she'd found things like a strawberry fruit salad that was basically all fruit that her kids love...

oh and I *loved* the day I got handed a pamphlet in which it said the usual no more than 6 oz juice a day. and then the woman takes the time to WRITE ON THE BACK and STRICTLY caution me against feeding my 2 year old more than ELEVEN oz. per day of juice

Or the day back when we had these day-diet forms to fill out--in one breath she is telling me my child is underweight. In the next, she looked at this sheet, saw I'd given him scrambled eggs at a meal, and was cautioning me to watch how much FAT he's getting from EGG YOLKS.......

Sorry, I'm not meaning to totally bash on a program...I am now going to say that I *love* how they've added so much stuff to our program here--I can now get whole grain tortillas and brown rice. (my kids will eat anything they can wrap and call a 'taco' and love rice, yay for me!)

I'm just saying that a class like you're proposing would be far more useful to me than 90% of the appts. I've had to date.

Are you vegan, or just veggie? I have been focusing on using all that dang milk (waaaay too much!). I have made chowders, puddings, and ice cream!

The beans are handy- homemade hummus, black bean burgers, split pea soup, etc.

You want me to look up my recipes for these?
