Ok so I thought it would be great to have a spinach dip I could use with pita chips. But son is allergic to dairy. All the recipes I see have sour cream. Does anyone make this without the sour cream? Maybe puree'd cannelini beans? Anyone?

I had some artichoke hearts to use up ( I had eaten the flesh from the leaves the day before, and I wanted to make some sort of dip. I found the above recipe. I don't eat soy, so this is what I did. I quick cooked some fresh spinach (small amount of water in a small pan filled with leaves on high, turn leaves over after a minute. turn it off at abt 2 minutes.) Let them cool. Put artichoke hearts in food processor, add a couple cloves of garlic, the spinach (with the tiny amt of water still in it, (then I confess I just looked for what might work that I had in fridge) so I added 2 olives, salt, dash of pepper, dash of lemon peel, and a good spoonful of homemade mayo. blend it up. It was tasty. oops forgot to mention I put a bit of oil in the mix too... I used sunflower but you could use olive oil if you like it
